The Mighty Brussels Sprout
Brussels sprouts are a member of the cabbage family. In the US, they are most often grown in California. They are a great source of vitamins C and K and a good source of vitamin B6, folate, and iron.
Don't let the addition of bacon scare you away. Each skewer only uses one piece, which adds a mere 60 calories. So eat better, eat less!

- 20-25 Brussels sprouts
- 8 oz whole mushrooms
- 1 package bacon
- Tony Chachere's creole seasoning, to taste
- Rinse the Brussels sprouts and cut off the hard ends. Place them in a bowl and season them with Tony Chachere's (this step may be omitted for a lower-sodium diet).
- Cut a slice of bacon in thirds. Wrap one of the sprouts, overlapping the ends of the bacon, then push a skewer through the overlapped bacon to secure it. Alternate wrapped sprouts and mushrooms on the skewer.
- Place the loaded skewers on a foil-lined tray and season again. Grill over medium heat for approximately 30 minutes. For softer sprouts, move off of direct heat and continue to cook to desired tenderness.
