Tips and Techniques

  1. To make the coating process easier, add a small amount of water into the egg mixture.
  2. Try adding other herbs, spices, and seasonings to make the fries tastier.
  3. Make a thicker breading by coating each piece of eggplant twice with flour and egg.
  4. The freezing step produces crispier fries.
  5. For best results, do not overcrowd the pan.
  6. Lay a paper towel on a plate or use a strainer to absorb or drain excess oil.
  7. Serve the fries with your favorite dip, such as ketchup or mayonnaise.

Hello Rinita,

Yes, you can bake it too. The temperature depends on the thickness of the eggplant and the oven that you're using. In my case, 425F for about 8 to 10 minutes or until golden brown. You can try zucchini or any vegetabes with the same texture. I hope this helps.

Can we bake instead of frying? Also, what other vegetables can be substituted for eggplant?

Fourwaystoyummy from Coupeville WA on March 17, 2020:

I am so curious if these will work in an air fryer. I am new to the cooking tool but love sweet potato and reg. potato fries in the machine. I'll have to give it a go and get back to you. Thanks!
