Texas Caviar: It's More Than Just a Dip !

I have a dip recipe that is a sure hit! My husband and I were at a party some time ago and noticed several people huddled around a large bowl devouring something interesting. Everyone was commenting on how delicious it was. I, myself, am a very picky eater and was not brave enough to try it, but my husband just loved it. We tracked the person down who brought this mystery dish and asked for the recipe. She said a friend of hers shared it, and she has been making it ever since. It's called Texas caviar.

A couple months later, my family planned to have their annual gathering. Since everyone was required to bring a dish, I decided this would be a great opportunity to try my new recipe. So I picked up the ingredients and made my first bowl of Texas caviar. Well, let me tell you, it was very easy to make and the most talked about dish at the reunion. I felt so proud. Everyone wanted the recipe for their own and I would like to share this recipe with you as well.


  • 1 Can Black Beans
  • 1 Can Black Eyed Peas
  • 1 Can Shoepeg Corn
  • 2 Jars Pimentos (Diced)
  • 1 Medium Red Onion (Chopped)
  • 1 Pepper (Chopped)
  • 1 Cup Sugar (Or Substitute with Stevia to save some calories!!)
  • 1/2 Cup Apple Cider Vinegar
  • 1/4 Cup Olive Oil
  • Bag of Tostitos Scoops

How to Prepare

First you take 1 cup of sugar; ½ cup apple cider vinegar and ¼ cup olive oil and put it in a small saucepan and bring it to a boil. Make sure to stir until the sugar is dissolved. Once it comes to a boil, turn off the heat and let cool to room temperature.

Rinse and Drain

While you are waiting for the dressing to cool, drain and rinse the following ingredients:

  • Black beans
  • Black eyed peas
  • Shoepeg corn
  • Chopped/diced pimentos

I like to use a fine strainer and just dump everything together and rinse it all at the same time. Let it sit until all the liquid has drained off.

Now chop the pepper and red onion. I like to use a Mandoline Slicer to speed up this process. Hint: I added an orange pepper for extra color. You may chop them as fine as you prefer.

Combine Ingredients

Combine all ingredients together, pour over the dressing and stir. Let sit overnight so that all the dressing soaks into the ingredients. Hint: the longer it sits, the better it tastes. Serve with your favorite nacho or tortilla chip. I think the ones that work best are the Tostitos Scoops. Line up some scoops on your plate, grab a spoonful of dip and fill your scoops. This way there's no chance for double dipping. No one likes a double dipper!

When and Where to Enjoy

Texas caviar is very bright and colorful and looks best served in a clear glass bowl. The vibrant colors make this dish very attractive and inviting. So inviting, that I eventually worked up my courage to try it and now I'm hooked. I don't even like all the ingredients, but when their blended together, it's delicious.

To make your dish extra colorful, add yellow or orange peppers. The more daring crowd might enjoy a green chili pepper chopped instead of a green pepper. This will certainly add an element of spice to your dip. If taking your dip for a mixed crowd to enjoy, I would split your recipe in half and separate into two bowls. Have one bowl that's spicy and one bowl that's mild. Be sure to clearly label each bowl appropriately.

Texas caviar is not only delicious and sure to please, but also very versatile. You get both the sweet and the salty flavoring all in one bite. Try serving with different types of crackers. My husband almost prefers the Triscuit brand crackers over nachos. If you find the dip is too sweet for you, then cut the sugar in half. You may also try replacing the sugar with a touch of honey. Serve your Texas caviar with pineapple slices for additional sweetness. It even freezes well!

The next time you go to a family picnic, a party, holiday gathering or potluck, bring your Texas caviar and it will be the center of attention. And the best thing about this recipe is that it can be served at room temperature. No more worrying about keeping your dish hot or cold.

It can be great as a gift as well. Fill a mason jar or any other glass jar of choice with Texas caviar. Decorate the jar by adding some raffia and embellish with some southwestern charm. Paint the jar lid any bright color you choose and add a snack size bag of tortilla chips or nachos. This dish makes a great practical gift for teachers, friends, family and co-workers without breaking the bank.

Texas caviar is a healthy, easy and inexpensive dish to make. It can be eaten as a dip or incorporated into a meal. But no matter how you choose to eat it, it's sure to bring a smile to your table.

Other Ways to Enjoy Texas Caviar

Here are some other ways I have served this dip:

Give your chicken a Southwestern flair. Place a chicken breast over a bed of rice and spread the Texas caviar over the top.

Use it as a dressing in a chicken wrap. Drain off as much of the dressing as possible in order to keep it from dripping out of your wrap. Use the chicken wrap as a great hors d'oeuvre for a baby shower. Just fold the wrap like a diaper and add a cute diaper pin to secure your wraps.

Texas caviar also works great as a topping for your tacos.

      A friend gave me a Texas Caviar recipe. Hers didn't have as many ingredients and didn't sound very good. This sounds much better.
