Lemon Mint Infusion - a simple and refreshing "pick me up" beverage

St. Patrick's Day is just around the corner, a day when the whole world is Irish!

Traditionally, this is also a day when the adults celebrate with a good stout mug of ale or beer or an after-dinner Irish liqueur.

But for those of us who don't drink much, or at least want to wait until the children are asleep in bed before partaking, it is a welcome idea to have some beverages available that can be enjoyed by the entire family.

With this in mind I'm sharing my personal collection of non-alcoholic Irish-themed beverages. They are all easy to make and can be enjoyed at any time of the day.

And if you're like me and have kids who enjoy experimenting in the kitchen, these beverages are pretty non-messy for the beginning little beverage maker.

Special note on recipes calling for mint leaves or mint extracts: Mint should never, ever be boiled or otherwise cooked as this can separate the mint resin and heighten the properties to an undesirable level. Also, always wash fresh mint leaves before using.

Lemon Mint Infusion

Lemon Mint Infusion is a simple, refreshing “pick-me-up” beverage.

Ingredients:

  • 1 quart warm water
  • ½ cup tonic water
  • 2 cups lemon slices
  • 1 cup fresh mint leaves
  • 2 tablespoons sugar

Preparation:

  • Add warm water and tonic water to large jug or pitcher.
  • Add sugar and stir well.
  • Bruise mint leaves gently with hands and add to mixture.
  • Add lemon slices to mixture.
  • Cover with plastic wrap and leave at room temperature for at least two hours.
  • Pour over ice and serve.

Makes approximately 4 servings.

A refreshing non-alcoholic drink with a “dry” flavor bang.

Emerald Isle Tea is a smooth tea with a "dry" flavor.

Ingredients:

  • 1 can frozen lime-aid mix*
  • 4 tablespoons instant sweetened tea mix
  • 2 teaspoons tonic water
  • ¼ teaspoon real ginger kitchen extract
  • lime slices

Preparation:

  • Prepare lime-aid in large pitcher.
  • Gently add instant tea mix, tonic water and ginger extract.
  • Stir well but not hard.
  • Pour into glasses, garnish with lime slices and serve.

Serves approximately 4.

*If lime-aid is unavailable, you may substitute frozen lemonade mix, and make green with 6-10 drops of green food dye.

Shamrock Whang! Smoothie

The Shamrock Whang! Smoothie puts an Irish twist on popular smoothies!

Makes about 2 servings.

Ingredients:

  • 1 cup lime sherbet
  • 1 cup plain frozen yogurt
  • 2 ounces pear juice
  • 1 teaspoon lime juice
  • 1 teaspoon sugar
  • ½ teaspoon spearmint extract
  • 2 tablespoons grated chocolate
  • mint leaves

Preparation:

  • Combine sherbet, yogurt, pear juice, lime juice, sugar and spearmint extract.
  • Blend until smooth.
  • Pour into glasses, garnish with grated chocolate and mint leaves.
  • Serve.

Shillelagh

This drink is named for the shillelagh, the traditional Irish walking stick.

The Shillelagh is a light beverage with a rich flavor, named for the traditional Irish walking stick of the same name.

Serves 1.

Ingredients:

  • 1 teaspoon of lemon juice
  • 1 teaspoon powdered sugar
  • 4 ounces of peach juice
  • 1 cup sliced raspberries*

Preparation:

  • Pour the lemon juice, peach juice and powdered sugar in a shaker, and shake well.
  • Strain the mixture over crushed ice.
  • Garnish the drink with raspberries.

*If raspberries aren’t in season you can substitute with strawberries.

An Irish Fairy is a light and very simple drink to make, perfect for a child's first attempt at beverage making!

Ingredients Per Serving:

  • 1 ounce blueberry juice
  • 2 ounces pear or apple juice
  • 3 ounces soda water

Preparation:

  • Stir the first ingredients together in a tall glass.
  • Add the soda water and serve.

Irish Garden Angel

The Irish Garden Angel is a rich beverage with vitamin power!

Serves approximately 4.

Ingredients:

  • Large bottle V8 V-Fusion juice*
  • Jug of carbonated water
  • Redi-Whip or similar canned spray whipped cream
  • Crushed ice
  • Cinnamon powder
  • Serving glasses

Preparation:

  • Pour the V8 V-Fusion over ice into glasses until about ¼ full.
  • Pour in carbonated water, leaving about a half inch between top of drink mixture and rim of glass.
  • Top with the whipped cream, sprinkle with cinnamon and serve.

*If you prefer you can substitute sweet potato juice for the V8 V-Fusion

Banana Leprechauns

Banana Leprechauns are refreshing, frothy drinks using bananas.

Serves approximately 4.

Ingredients:

  • 4 ripened bananas
  • ½ teaspoon mint extract of choice
  • 5-8 drops green food dye
  • 2 cups cubed ice

Preparation:

  • Peel and slice bananas, put into blender and blend until bananas are a smooth consistency.
  • Add the mint extract, green food dye and ice.
  • Cover blender and mix all ingredients into a fine puree.
  • Pour into glasses and serve.
  • For a “sparkling” touch, fill glasses only ½ way and then pour in carbonated water to top.

Moon o'er Erin

Moon o'er Erin is an after-dinner coffee beverage.

Ingredients (per serving):

  • cup of black coffee
  • 1-2 tablespoons maple syrup*
  • 1 drop wintergreen, spearmint or peppermint extract
  • Sprig of mint of choice
  • Vanilla ice cream

Preparation:

  • Brew coffee and allow to come to room temperature.
  • Pour cooled coffee into individual cups or glasses.
  • Stir in the maple syrup and mint extract.
  • Fold in ice cream or dollop a large spoonful over coffee mixture and serve.

*liquid Bailey's Irish Creamer can be substituted for the maple syrup if preferred

Shamrock Milk is my personal favorite non-alcoholic Irish-themed beverage! It is thick, yummy, nutritious and our kids love it!

Ingredients:

  • 2 cups prepared and set pistachio pudding
  • 2 cups coconut milk
  • 2 teaspoons almond extract
  • dash of salt
  • ¼ teaspoon lemon juice
  • 1 cup ice cubes
  • finely grated nuts or fruit slices

Preparation:

  • Put pistachio pudding, coconut milk, almond extract, salt and lemon juice into blender and fold well.
  • Add ice and blend mixture until it reaches a slushy texture.
  • Pour into glasses, garnish with grated nuts or fruit slices and serve.

    Will, we were under tornado warnings all Friday night, and while the wind was fierce the storms here never turned into a tornado. But out near the middle of TN where my older son lives they had one touch down about five miles from their home. We feel very fortunate everyone stayed safe, though. Thanks much for asking! How did your part of the country fare?
