Fall Season Pumpkin Granola

Making your own granola is quick, easy, and delicious. The best thing about making it yourself is that you can tweak the recipe to suit your tastebuds. This recipe is perfect for those chilly fall days when you are craving something cozy and spicy.

The nuts add a nice crunch, and the coconut adds some sweetness. It also adds a taste of the tropics that nicely complements the pumpkin.

Don't even get me started about pumpkin. I love pumpkin lattes, pumpkin bread, pumpkin cookies and especially pumpkin pie. Now I can add this delicious pumpkin granola to my list of fall favorites.

about 6 cups granola


  • 3 cups oats, rolled
  • 1/2 cup chia/flax/hemp seeds (optional; you can use one, all, or none of these)
  • 1/2 cup sweetened coconut, shredded
  • 1 cup pecan pieces
  • 1/2 cup cashew pieces
  • 1/2 cup sliced almonds
  • 1/4 teaspoon sea salt
  • 1 teaspoon pumpkin pie spice
  • 1/4 cup coconut oil
  • 1/3 cup maple syrup
  • 1/3 cup pumpkin puree
  • 1 teaspoon vanilla


  1. Mix nuts together on a baking pan and bake for about 10 minutes at 350 degrees, until the nuts are lightly toasted. Set aside.
  2. While the nuts are toasting, mix the oats, hemp/chia/flax seeds, coconut flakes, sea salt, and pumpkin pie spice in a large bowl.
  3. When the nuts are lightly toasted, remove them from the oven and allow them to cool. While the nuts are cooling, mix the coconut oil, maple syrup, and pumpkin puree in a small saucepan. Heat over medium-low heat until it begins to simmer, stirring constantly.
  4. Remove the coconut oil mixture from heat and add vanilla. Set aside.
  5. Add the cooled nuts to the oats and stir to combine.
  6. Add the coconut oil mixture to the dry ingredients and stir until well mixed.
  7. Press the mixture onto a cookie sheet. Bake at 350 degrees for 10 minutes. Remove the pan from the oven and stir the granola. Bake for 10 more minutes. Stir one more time and then return to the oven for the final 10 minutes. (The total baking time is 30 minutes.)
  8. Remove the granola from the oven and press lightly to compress. When cool, break it into pieces and store up to a week in an airtight container.

How to Enjoy Pumpkin Granola

This easy, delicious pumpkin granola is great by itself. I like to add it to my morning fruit and granola, to my evening ice cream, and to just about every snack. I haven't tried it on top of my pumpkin latte yet!
