A Brunch Favorite

This recipe is one of our family's favorite brunch meals. Who doesn't love bacon? I enjoy getting creative in the kitchen, whipping up new dish variations with simple ingredients. This cheesy egg and bacon bake is the perfect combination of classic breakfast foods. It's a dish the whole family will love!

  • 1 package bacon
  • 2 cups Jiffy All-Purpose Baking Mix
  • 6 large eggs
  • Handful shredded mozzarella cheese
  • Handful shredded cheddar cheese
  • 2/3 cup + 1/4 cup milk
  • Flour, as needed, for kneading
  • Cooking spray

Instructions

  1. Fry the bacon over medium heat until brown. Place fried pieces on a plate covered with a paper towel. Once all the bacon is fried, set aside.
  2. Preheat the oven to 450 degrees.
  3. In a large mixing bowl, combine 2 cups of Jiffy mix with 2/3 cup of milk. Mix together until crumbly.
  4. Sprinkle a little flour on a cutting board or on the counter. Knead the dough thoroughly.
  5. Coat a 9x9 square pan with cooking spray. Spread dough evenly in the pan.
  6. Break up pieces of fried bacon on top of the dough. Be sure to cover the entire pan.
  7. In a medium mixing bowl, combine 6 eggs with a 1/4 cup of milk. Add a handful of mozzarella and cheddar shredded cheese. Pour mixture into your square pan.
  8. Bake for 25-30 minutes. The top of your cheesy egg and bacon bake will be golden brown. Cut into the bake to make sure the egg is completely cooked.
  9. Enjoy with a glass of chocolate milk, orange juice, or a hot mug of coffee.

This looks delicious, Alyssa, and yet a meal that would be easy and quick to prepare! I would just like to say that vegetarians and people who have to follow low cholesterol diets can enjoy this as well. I no longer eat meat so I would substitute the pork bacon with vegan bacon made by Morning Star and it tastes just as good as real bacon! No kidding. Only I think it's crispier and you don't have to go through the trouble of frying it. Just microwave the bacon strips for 1-2 minutes to cook before placing it on top of the dough. What a great recipe for breakfast! Thanks Alyssa. The best to you and your family, always.

I'm sorry, Kyler. I am unfamiliar with gluten-free and low-carb options. Even doing a simple Google search, I found a bunch of Jiffy Mix and Flour dupes, but I've never used any of them. I did find a similar recipe that is Keto friendly (It says this recipe is gluten free and low carb) from Wholesome Yum. It's called Healthy Keto Low Carb Breakfast Casserole. You could substitute bacon for the sausage. The recipe calls for 1/2 cup heavy cream, 12 eggs, 2 cups of cheddar cheese (you could use the mozzarella and cheddar from mine, if you like.) 1lb sausage (again, just use bacon instead.) 6 cloves of minced garlic, 2tbsp of chopped parsley, 3 cups of broccoli, and salt and pepper. Basically the same instructions as my recipe, but you will bake everything at 375 for 30 minutes. I hope that helps.

Any suggestions on a gluten-free, low-carb style for the dish? I'd suggest almond flour but that stuff is so hard to work with!
