I Grew Up With These Casseroles

Some people think “casserole” means an unrecognizable blob of mystery ingredients. Hopefully these recipes will be a pleasant surprise.

All casseroles are easy when it comes to cooking time. They're in the oven and require no stirring. Quick casseroles mean very little preparation time. All of these recipes take 45 to 60 minutes to bake, but you can use this time to prepare your side dishes, clean up the kitchen, check your email, or put your feet up.

I grew up preparing and eating most of these casseroles. We were a working-class family, so we looked for dishes like these: fast, cheap, easy to make, and tasty to boot!

1. Cousin Hal's Favorite Tuna Casserole

Ingredients

  • 2 cans cream of chicken soup
  • 1 large or 2 small cans of tuna, drained
  • 1 sleeve (36) saltine crackers
  • 2 1/2 cups shredded cheddar cheese

Directions

  1. Combine the soup and drained tuna in a bowl.
  2. Grease a 9 x 9 casserole dish and smear 2 rounded tablespoons of soup mixture on the bottom.
  3. Arrange a layer of 9 crackers. Spread about 1/4 of the tuna and soup mixture over the crackers. Sprinkle with 1/2 cup shredded cheddar cheese.
  4. Repeat crackers, then tuna and soup mixture. Sprinkle about 1 cup cheese.
  5. Repeat crackers, tuna, soup, and 1/2 cup cheese.
  6. Repeat crackers, tuna, and soup layers.
  7. Bake in a preheated 350-degree oven until thoroughly warm, about 40 minutes.
  8. Remove from oven and top with remaining 1/2 cup cheese. Return to oven for 10 minutes.

  • Use your favorite cream soup.
  • Use any favorite cheese.
  • Use a 9 x 13 pan and do three layers, with three crackers across and four down.

2. Tater Tot Casserole

Ingredients

  • 2 cans cream of chicken soup
  • 1 soup can of milk
  • 1 1/2 lb ground beef, browned and drained
  • 1 bag of frozen tater tots

Instructions

  1. Brown the ground beef. You can do this ahead of time to speed up the preparation.
  2. Mix the soup, milk, and drained browned ground beef.
  3. Grease a 9 x 11 casserole dish. Spread the soup mixture on the bottom.
  4. Place a layer of tater tots on top.
  5. Bake in a preheated 350-degree oven until thoroughly warm, about 40 minutes.

Variations

  • Use any favorite cream soup.
  • Top with cheese.
  • Place leftover French fries in the bottom of baking dish. Mix soup, ground beef, and a bag of frozen mixed vegetables, pour in the fries, and bake.

3. Chicken Pot Pie

Ingredients

  • 1 large can of flaked chicken meat
  • 2 cans cream of chicken soup
  • 1 can water or milk
  • 1 can or jar of chicken gravy
  • 2 cans mixed vegetables, drained or 1 bag frozen mixed vegetables
  • 1 can diced potatoes or 1 large potato diced, cooked, and drained
  • 2 deep-dish frozen pie shells, thawed
  • 2 regular frozen pie shells, thawed

Directions

  1. Cover the bottom of a greased 11 x 13 casserole dish with the deep-dish pie crusts. Don’t worry if there are gaps.
  2. Mix the soups, gravy, and water or milk in a bowl. Add the vegetables and chicken.
  3. Pour the mixture into the pie shells.
  4. Top with the two remaining pie crusts. Again, don’t worry if there are gaps.
  5. Bake in a preheated 350-degree oven for about 1 hour. Turn up the oven temperature if needed to lightly brown the crust.

4. Chicken Divan

A decadent treat! I like to use Duke's mayonnaise from the Sauer Company, the mayo of my youth.

Ingredients

  • 1 to 1 1/2 lbs boneless skinless chicken breasts or tenderloins
  • 4 cups long-cooking rice, cooked (do not use instant rice)
  • 1 bag frozen broccoli florets
  • 2 cans cream of chicken soup
  • 1 can milk
  • 1 cup mayonnaise
  • 1 1/2 tsp curry powder

Directions

  1. Mix the soup, mayo, milk, and curry powder in a bowl.
  2. Mix half of the soup mixture with the rice.
  3. Grease a 9 x 11 or equivalent casserole dish. Spread the mixture on the bottom.
  4. Top with broccoli, then chicken. I use boneless chicken breasts, which I trim into several pieces and partially cook in a skillet.
  5. Spread the remaining soup mixture on top.
  6. Bake for 60 minutes at 400 degrees.

5. Chicken and Dressing Casserole

Ingredients

  • 4 chicken breasts or 1 whole chicken cut into pieces
  • 1 small onion
  • 1 cup chicken broth
  • 3/4 cup milk
  • 2 eggs, beaten
  • 8 oz. stuffing mix
  • 2 cans cream of chicken soup

Directions

  1. Cook the chicken. Remove the bones and skin.
  2. Mix the stuffing, onion, broth, milk, eggs, and soup. Add boned chicken.
  3. Grease an 11 x 13 pan. Pour in the mixture and bake for 1 hour at 350 degrees.

This is one of my mom’s newly discovered favorites.

Ingredients

  • 3 chicken breasts, cooked and cut into bite-sized pieces
  • 1 can cream of chicken soup
  • 8 oz. sour cream
  • 1 sleeve Ritz or similar crackers
  • 1 stick butter

Directions

  1. Arrange the chicken in a greased casserole dish.
  2. Combine the soup and sour cream. Pour over the chicken.
  3. Stir together chicken and soup mixture.
  4. Crush the crackers. You can do this by putting them in a plastic bag and rolling a bottle or rolling pin over them. Spread the crushed crackers on top of the casserole.
  5. Drizzle melted butter on top of the crackers.
  6. Bake at 350 degrees for 45 minutes.

This is my version of a classic.

Ingredients

  • 2 ½ lbs. ground beef
  • 1 package onion or beef-onion soup mix.
  • Ingredients for meatloaf on soup packet, except ketchup topping
  • 3 cans corn, drained
  • 1 or 2 cans English peas, drained
  • 6 medium potatoes, diced, cooked and drained with some water reserved
  • 1 can evaporated milk
  • 1 cup Parmesan cheese

Directions

  1. Make meatloaf according to soup mix directions. Note that I recommend 2 1/2 lbs. ground beef, which is more than the soup package calls for.
  2. Grease an 11 x 13 pan. Pat meatloaf mixture in. Do not add tomato ketchup topping.
  3. Evenly spread the corn and peas on top of the meatloaf.
  4. In a bowl, mash the potatoes. Blend in as much milk as needed for consistency. Add some of the potato water if needed.
  5. Blend the Parmesan cheese into the potatoes.
  6. Spread the potato mixture over the meat and vegetables. This is a little tricky! Try not to displace the peas and corn.
  7. Bake in a preheated 350-degree oven about 1 hour.

Ingredients

  • 1 1/2 to 2 lbs. hamburger
  • Seasoned salt
  • 2 cans tomato soup
  • 1 can water
  • 6 medium potatoes, peeled and sliced into rounds
  • 2 medium onions, peeled and sliced into rounds

Directions

  1. Mix seasoned salt into hamburger meat and form into 4 to 6 hamburger steak patties.
  2. Grease an 11 x 13 pan. Arrange the hamburger patties on the bottom.
  3. Layer the sliced potatoes and onions on the patties.
  4. Blend the soup and water. Pour over the top of the casserole.
  5. Bake covered for 1 hour in a 350-degree oven.
