In the summertime it can be too hot to bake. That's when I like to make this delicious (and easy!) icebox cake featuring peaches, cream, and graham crackers.

Ingredients

  • 200 grams graham crackers
  • 1 (825-gram) can peaches halves in light syrup, 1/2 chopped and 1/2 sliced
  • 3 (250-ml) pouches Nestle All-Purpose Cream, whipped
  • 1 (410-ml) can Angel Kremdensada, whipped

Instructions

  1. Chill the Angel Kremdensada, Nestle All-Purpose cream, stainless steel bowl and wire whisk for at least 4 hours.
  2. Divide the can of peaches into two equal parts. Thinly slice the first half, and chop the other half. Refrigerate prepared peaches while waiting.
  3. Once the chilled items are ready, start preparing the cream filling. Beat the Angel Kremdensada and Nestle All-Purpose Cream until stiff peaks form. Set aside.
  4. Line a thin layer of cream filling in the bottom of the pan. Then place a layer of graham crackers on top.
  5. Add a thicker layer of cream filling, then chopped peaches, then another layer of graham crackers.
  6. Repeat step #5 until the pan is filled up to its rim. Use sliced peaches for the final layer.
  7. Cover the baking pan with aluminum foil and refrigerate until firm.
  8. Serve and enjoy!

Tips and Techniques

  • Use peaches halves in heavy syrup to make this dessert a little sweeter.
  • Replace Angel Kremdensada with one (190-ml) can of condensed milk and one (125-ml) pack of all-purpose cream.
  • Adjust the amount of condensed milk for a sweeter version of this cake.
  • Substitute graham crackers with another type of cracker.
  • Chilling the all-purpose cream, large metal bowl and whisk before beating the cream helps produce a light and airy texture.
  • Use chopped peaches as a filling and sliced peaches as a garnish.
