1. Italian Cream Cake Recipe


Italian cream cake is very moist and loaded with coconut and pecans. It is topped off with a yummy cream cheese frosting.

I know this cake will be a keeper in your recipe box. Gather these ingredients before you start!

Ingredients for Italian Cream Cake

  • 2 cups sugar
  • 2 stick (1 cup) butter
  • 5 egg yolks (save egg whites)
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 2 cup flour, sifted
  • 1 teaspoon vanilla extract
  • 5 egg whites (saved from yolks)
  • 1 cup pecans, chopped
  • 1 1/3 cup coconut

Instructions for Making Italian Cream Cake

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Cream the sugar and butter; add the egg yolks.
  3. Combine the buttermilk and soda in a small bowl; stir well; add to the sugar-butter mixture.
  4. Add the flour and vanilla.
  5. Beat the egg whites until stiff in another bowl; fold into the batter.
  6. Add the pecans and coconut.
  7. Divide the batter into 4 greased and floured pans.
  8. Bake for 20 to 30 minutes.
  9. Cool the cake.
  10. Frost the cake with the cream cheese frosting.

Cream Cheese Frosting Recipe


  • 1 stick butter, ½ cup, softened
  • 3 ¾ cups powdered sugar, sifted
  • 1-8 ounce cream cheese softened

  1. Cream together all the ingredients except the pecans.
  2. Stir in the chopped pecans.

2. Earthquake German Chocolate Cake Recipe


This delicious cake is made easy with a German chocolate cake mix. As this moist cake bakes, it makes a luscious cream cheese topping creating cracks in the cake, no frosting needed.

It would be a great dessert for any meal and excellent for a potluck.

Ingredients for Earthquake German Chocolate Cake

  • 1 box German chocolate cake mix
  • 1 1/2 cups pecans, chopped
  • 1/2 cup ( 1 stick) butter or margarine, softened
  • 1 teaspoon vanilla extract
  • 1 1/2 cup coconut, flaked
  • 16 ounces powdered sugar
  • 1-8 ounce cream cheese, softened

Instructions for Making Earthquake German Chocolate Cake

  1. Grease a 9-inch x 13-inch or a 10-inch x 14-inch pan.
  2. Preheat oven to 350 degrees Fahrenheit.
  3. In a bowl combine pecans and coconut; place in the bottom of the pan, spreading evenly.
  4. Prepare the cake mix following the directions on the box.
  5. Pour the cake mix over the pecans and coconut.

Words cannot describe how delicious this cake taste. It has been a favorite of mine for many years.

It was my choice of cake at my wedding, and very appropriate for a December wedding. My husband did get to eat as much as he wanted, but a honeymoon must go on!

It looks hard to make but give it a try it is worth it.

Ingredients for Red Velvet Cake

  • 2 ¼ cups all-purpose flour, sifted
  • ½ teaspoon salt
  • ½ cup shortening
  • 1 ½ cups granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 2 eggs
  • ¼ cup red food coloring (2-ounces)
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vinegar
  • A sprinkle with chopped nuts on top, optional

Instructions for Making Red Velvet Cake

  1. Prepare two 9-inch round pans with grease and flour.
  2. Cream shortening and sugar; add vanilla extract.
  3. Beat in eggs, one at a time, mixing well.
  4. Add the food coloring mixing on low.
  5. Alternately, add the flour, cocoa powder, salt (that has been sifted together), and buttermilk just until combined.
  6. Stir together the baking soda and the vinegar and add to the batter, mixing well.
  7. Pour into the pan that has been prepared.
  8. Bake at 350 degrees Fahrenheit for 30 minutes, or until toothpick come out clean.
  9. Frost with cream cheese frosting.

Cream Cheese Frosting for Red Velvet Cake


  • 1-8 ounce package cream cheese
  • ½ cup butter
  • 2 teaspoons vanilla extract
  • 5 cups powdered sugar


  1. Combine the cream cheese, butter, and vanilla extract.
  2. Beat until light and fluffy.
  3. Add the sifted powdered sugar until it is spreading consistency.

4. Carrot Cake Recipe


Carrot cake is moist and delicious, with grated carrots and a cream cheese frosting.

My husband requested a carrot cake a few days ago, so the hunt was on to find my recipe.

You can bake in a tube pan or 9-inch x 13-inch pan.

  • 3 cups flour
  • 2 cup sugar
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoon cinnamon

  • 1 cup Canola oil
  • 2 cups grated carrots
  • 1-15.5 ounce can crushed pineapple with juice
  • 2 teaspoon vanilla extract
  • 3 eggs

Instructions for Making Carrot Cake

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Sift and mix dry ingredients (the first six ingredients).
  3. To the dry ingredients, add oil, carrots, pineapple (with juice), and vanilla extract. Mix well.
  4. Add nuts to the mixture.
  5. Beat the eggs in last.
  6. Pour into a tube pan, layer pans or 9-inch x 13-inch pan.
  7. Bake one hour.
  8. Cool before frosting.

Cream Cheese Frosting for Carrot Cake


  • 3 ¾ cups powdered sugar or 1 box
  • 1 stick margarine or butter
  • 1-8 ounce package cream cheese softened
  • 1 teaspoon vanilla extract
  • ½ cup pecans, chopped
  • 1 cup coconut


  1. Cream the ingredients well and spread on the cooled cake.

5. Gooey Butter Cake Recipe


The cake is full of gooey goodness! It is fast to assemble using a cake mix for the crust, and layered with cream cheese.

In my book, if it has cream cheese, I will love it.

Ingredients for Gooey Butter Cake

  • 1 box butter cake mix
  • 4 eggs (divided)
  • ½ cup butter, melted
  • 3 ¾ cups powdered sugar
  • 1-8 ounce cream cheese, softened

Instructions for Making Gooey Butter Cake

  1. Combine the cake mix, 2 eggs, and melted butter.
  2. Spread in a greased 9-inch x 13-inch pan.
  3. In a medium bowl, mix the powdered sugar, two eggs, and cream cheese.
  4. Pour this mixture over the cake mixture, spreading evenly.
  5. Bake at 350 degrees Fahrenheit, in a preheated oven, for 35 to 40 minutes.
  6. When the cake is cool, sprinkle with the powdered sugar.
  7. Refrigerate the leftovers.

The cream cheese pound cake is a deliciously moist pound cake.

It can be served plain or topped with a glaze. A slice would be yummy served with fresh fruit, whipped cream, or a sauce.

Real butter is a must in this decadent cake!

Ingredients for Cream Cheese Pound Cake

  • 3 cups all-purpose flour, sifted
  • 1 ½ cups or 3 sticks, unsalted butter, softened (use real butter)
  • 3 cups granulated sugar
  • 6 eggs
  • 1 ½ teaspoon vanilla extract
  • 1-8 ounce package cream cheese softened

Instructions for Making Cream Cheese Pound Cake

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Prepare a 10-inch tube pan or 12 cup bundt pan with butter and flour.
  3. Cream butter and cream cheese in a large bowl on medium-speed with an electric mixer.
  4. Add sugar and increase to high-speed, beat until fluffy.
  5. Add eggs, beating after each.
  6. Add vanilla extract and flour at one time and mix only until blended, pour batter into prepared pan.
  7. Bake for 1 hour or longer until toothpick comes out clean.

7. Fresh Apple Cake Recipe


Fresh apple cake is so moist and loaded with fresh apples. It also may be made with fresh pears and is equally delicious. It freezes well.

Ingredients for Fresh Apple Cake

  • 3 cups all-purpose flour, sifted
  • 1 cup Canola oil
  • 1 ½ teaspoon baking soda
  • 1 cup chopped nuts ( I like pecans)
  • 1 teaspoon vanilla extract
  • 2 cups sugar
  • 2 eggs, beaten
  • 1 teaspoon salt
  • 3 cups apples, peeled and chopped

Instructions for Making Fresh Apple Cake

  1. Mix by hand the dry ingredients. Add oil, eggs, and vanilla.
  2. Add apples and nuts.
  3. Press into 9-inch x 9-inch pan.
  4. Bake at 350 degrees Fahrenheit for 35 minutes.

I love making pound cakes, although they do put the pounds on you!

Pound cakes are one of my grandkids favorite. They can demolish one in an afternoon!

This is one of my favorite chocolate pound cakes, and it's moist and delicious.

Ingredients for Chocolate Pound Cake

  • 2 sticks margarine
  • ½ cup Crisco shortening (or whatever brand you desire)
  • 3 cups sugar
  • 5 eggs
  • ½ cup unsweetened cocoa
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 3 cups all-purpose flour
  • 1 cup milk2 teaspoon vanilla extract
  • 1 cup chopped pecans (optional)

Instructions for Making Chocolate Pound Cake

  1. Cream margarine, shortening, and sugar.
  2. Add eggs, beating well after each.
  3. Sift dry ingredients, including cocoa, together.
  4. Add dry ingredients to creamed mixture, alternately, with milk and vanilla.
  5. Grease and flour a tube, bundt pan, or three loaf pans.
  6. Pour batter in and gently press nuts on top, covering the entire surface.
  7. Bake at 325 degrees Fahrenheit for one hour, or until cake tests done.
  8. Do not over-bake.
  9. Good with or without frosting.
  10. Freezes well.

9. Oatmeal Cake Recipe


Oatmeal cake has been around for a long time in my recipe box. The oatmeal in the cake and coconut pecan icing make this a very moist cake.

Ingredients for Oatmeal Cake

  • ½ cup butter or margarine
  • 1 cup oatmeal, old fashioned, uncooked
  • 1 ½ cups water
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 ¼ cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Instructions for Making Oatmeal Cake

  1. Bring butter and water to a boil. Add oatmeal. Let set for 20 minutes.
  2. In a large bowl, beat eggs, white sugar, and brown sugar.
  3. Sift flour with baking soda, salt, and cinnamon.
  4. Mix dry ingredients and oatmeal into sugar mixture.
  5. Pour in ungreased 9-inch x 13-inch pan.
  6. Bake at 350 degrees Fahrenheit for 35 minutes, or until done.

Icing for Oatmeal Cake


  • 1 cup brown sugar
  • ½ stick butter or margarine
  • 2 tablespoon milk
  • 1 cup coconut
  • 1 cup chopped pecans
  • 1 teaspoon vanilla extract


  1. Mix sugar, butter, and milk, and boil one minute.
  2. Add coconut, chopped pecans, and vanilla extract.
  3. Spread over entire cake.
  4. Put under broiler until slightly brown; watch closely or it will burn.

10. Pineapple Upside Down Cake Recipe


I have not made a pineapple upside-down cake in a long while, and I think it is time to make one.

This cake uses pineapple chunks instead of pineapple rings. You can add chopped pecans and maraschino cherry if desired.

This delicious cake goes together quickly. Enjoy this old-fashioned dessert!

Ingredients for Pineapple Upside Down Cake

  • 1/3 cup butter
  • ½ cup brown sugar
  • 1 large can pineapple chunks, drained
  • 1 1/3 cup flour
  • 2 teaspoons baking powder
  • 1/3 cup oil
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup sugar
  • ½ teaspoon salt
  • 2/3 cups milk
  • ½ teaspoon lemon flavoring

Instructions for Making Upside Down Pineapple Cake

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Melt the butter in heavy 10-inch skillet or 9-inch x 9-inch square pan.
  3. Sprinkle brown sugar over melted butter.
  4. Arrange pineapple on butter sugar-coating. Add pecans and cherries if desired.
  5. Sift flour, sugar, baking powder, and salt in the bowl.
  6. Add oil, milk, and flavoring; beat two minutes.
  7. Add egg; beat two more minutes.
  8. Pour batter over fruit.
  9. Bake for 40 to 50 minutes.
  10. Immediately turn upside down onto serving plate.
  11. Leave pan over cake a few minutes before removing to make sure all the topping comes out.

11. Easy Strawberry Shortcake Recipe


I always look for easy ways to do my cooking, especially since I have matured!

I love biscuits but cannot make them like my mama. I always buy the Pillsbury frozen biscuits in the freezer section at the grocery store. They are just as good as homemade when filled with whipped cream and fresh strawberries.

If you like, you can make your own recipe for the baking powder biscuits.

Ingredients for Strawberry Shortcake


  • 1-12 Package of Pillsbury Grands Buttermilk froze biscuits
  • Whipped fresh cream
  • Sliced strawberries

Instructions for Making Strawberry Shortcake

  1. Bake the biscuits using the package instructions.
  2. If you like soft sides, place biscuits touching. For crisp sides, place apart (not touching).
  3. Slice each biscuit in half. Then fill with whipped cream and sliced strawberries.

What is "made from scratch" when cooking?

"Made from scratch" means when you do not use mixes to cook. A lot of folks use mixes to supplement in place of cooking from scratch.
I must confess, and you can see by my recipes, that many times I use mixes!
