I haven't made these Congo squares for a long time, so I thought I would bake them. It is an easy and simple recipe to make. I love that when I am done mixing the ingredients, all that needs to be done is to pour the batter into a pan. I wanted something quick and simple, and this is the recipe. My mother used to make these squares when I was a child. If you love sweets, then you will love these.

Cook Time

Cook time: 30 min
Ready in: 30 min
Yields: About 12 squares

  • 2 3/4 cups Flour
  • 2 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 2/3 cup Vegetable Oil
  • 2 1/4 cup Brown Sugar
  • 3 Eggs, beaten
  • 1/2 package Chocolate Chips

  1. In a bowl, mix the flour, baking powder and salt together, set aside. In another bowl, pour the vegetable oil and add the brown sugar and stir. Add the beaten eggs and stir together. Add the flour, baking powder and salt mixture in with the oil, brown sugar and eggs. Mix all the ingredients together. After you mix it, add chocolate chips to the bowl.
  2. Pour the mixture into a 9 x 12 pan. Bake at 350 degrees for about 30 minutes. When done, take it out of the oven and let cool. Cut into squares when it is almost cool.

These look yum for sure. They look like chocolate chip cookie bars. Do you know why they are called Congo bars?
