No Ice Cream Machine? No Problem.

It's August, and the long days of summer feel like they'll last forever. I love cooling off with ice cream, and it occurred to me that I might like to try making it from scratch rather than buying it from the store.

The problem, however, is that I don't have an ice cream maker. After a bit of experimentation I found a great solution. Did you know you can use a stand mixer to make homemade ice cream?

I have been an avid user of a Kitchen Aid stand mixer for many years, and my primary use is baking. There is no doubt about this machine, as it is durable and works perfectly every time. Whenever I want to bake bread, pastries, or cakes, the stand mixer is my pick rather than a regular hand mixer. It makes perfect dough, in my opinion.

I wondered: Could it also work for churning ice cream?

I decided to make Kinder Bueno ice cream after my husband surprised me one day with a package containing 20 Kinder Bueno candy bars.

I love Kinder Bueno bars, but 20 of them all at once is a lot! I wondered if I could come up with a creative use for them.

Cupcakes? Muffins? Nah. Suddenly it occurred to me: how about ice cream?

I have to confess that this idea did not come completely out of the blue. When I studied in Italy, I remember going to the gelataria with my friends after class. With one euro I could buy a large cone of ice cream with my favorite flavor. Guess which flavor was my favorite? That's right, Kinder Bueno.

What Is Kinder Bueno?

Kinder Bueno is a chocolate bar and wafer confection made by the Italian confectionery maker Ferrero. It is a hazelnut-cream-filled, wafer covered in milk chocolate and a dark chocolate drizzle. It's delicious!

The Results

I am happy to say that the results were fantastic. The texture of the ice cream was smooth, and the taste was absolutely amazing. Oh, and the Nutella really brought the chocolaty and nutty flavor to the ice cream. It was so good!


  • 1 cup whole milk
  • 2 1/3 cups heavy whipping cream
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons Nutella
  • Pinch of salt
  • 7-8 Kinder Bueno bars
  • Hazelnuts, unskinned and lightly toasted for topping

Candy Substitution Idea

Another alternative to Kinder Bueno is Kit Kat. You also can also replace the Nutella with any type of chocolate spread you prefer.


  1. In a mixing bowl, combine the whole milk and heavy cream.
  2. Add the sugar, vanilla, salt, and Nutella.
  3. Use a whisk to roughly combine the ingredients.
  4. Attach the whip beater and mixing bowl to the stand mixer.
  5. Choose the low-power setting, as the mixture is very liquid at this stage. Mix for 10-15 minutes.
  6. Detach the mixing bowl from the stand mixer, and cover with cling wrap before transferring it to the freezer.
  7. After 3 to 4 hours, take the bowl out of the freezer. Combine the Kinder Bueno candy bars with the ice cream base and continue mixing until it is all combined.
  8. Pour the ice cream base into a prepared pan (I used a loaf pan and layered it with cling wrap) or freezer-safe container. Set aside.
  9. In a mortar, place the hazelnuts and pound them coarsely. Add the Kinder Bueno and sprinkle the hazelnuts on top of the ice cream.
  10. Place the ice cream in the freezer until it sets completely, about 4 hours. (Note: After 4 hours in the freezer, the ice cream was a bit hard to scoop. Therefore, I left the ice cream at room temperature for a few minutes before serving it.)
  11. For serving: Top with hazelnuts, Nutella, or chocolate sauce. Enjoy!
