It's hazy, hot, and humid outside right now, and the last thing I want to do is turn the oven on. As much as I love to bake, it's not my favorite thing to do in the heat of the summer. I'd much rather have something cool and refreshing.

Good any time of the year, these no-bake cherry limeade cheesecake squares are especially tasty in the summer.

Made with tangy lime gelatin, the squares have a lovely tart flavor that is offset by the sweet cherry gelatin. The ingredients are whipped into a mousse-like texture that is incredibly light and fluffy, and the cake practically melts in your mouth.

The next time you are searching for a treat, but don't feel like turning on a hot oven, try this recipe. You won't be disappointed.

  • 25 vanilla sandwich cookies
  • 1/4 cup (1/2 stick) butter
  • 3/4 cup boiling water
  • 1 pkg. lime flavored gelatin, 3 oz. box
  • 1 cup ice cubes
  • 1 pkg. cream cheese, 8 oz.
  • 1/4 cup sugar
  • 1 container whipped topping, 8 oz.
  • 3/4 cup boiling water
  • 1 pkg. cherry flavored gelatin, 3 oz. box
  • 1 cup ice cubes

Cooking tips

  • Work quickly, especially when adding the cherry gelatin. This dessert sets up rapidly.
  • Use the whisk attachment on your mixer when adding the lime gelatin to the cream cheese mixture. It takes a while to get it smooth and you may not think it will incorporate, but it does.
  1. Line a 13x9 pan with aluminum foil, bringing the foil up the sides and over the ends. Set aside.
  2. Melt the butter in the microwave.
  3. Using a heavy duty blender, pulverize the cookies and the melted butter into fine crumbs. I use the Ninja food processor and it works wonderfully.
  4. Pour cookie crumbs into the prepared 13x9 pan and press firmly, evenly covering the bottom of the pan. Refrigerate until ready to use.
  5. In a small bowl, pour the boiling water over the lime gelatin and stir until completely dissolved, about 2 minutes. Add ice cubes and stir until melted.
  6. Mix the cream cheese and sugar until well mixed. Add the lime gelatin mixture and blend until smooth.
  7. Whisk in the whipped topping until fully incorporated.
  8. Pour mixture over the cooled cookie crust.
  9. Prepare the cherry gelatin by pouring 3/4 cups of boiling water over the gelatin. Mix until dissolved, about 2 minutes. Add 1 cup of ice and stir until melted.
  10. Pour spoonfuls of the cherry gelatin over the cheesecake. Using a fork, knife or other sharp kitchen tool, incorporate the cherry gelatin into the cheesecake. Use as much, or as little, cherry gelatin as you'd like. You'll have some cherry gelatin left, which can be saved for a snack.
  11. Refrigerate for 3-4 hours until firm. Refrigerate any unused portion.
