Italian Food in South Asia

In the last seven or eight years, I have noticed that Italian food has become quite popular in South Asian countries. Before, this cuisine had been available in a few restaurants here and there—but it was not as popular as it is now. People certainly did not try making Italian food at home, partly because Italian cuisine is so different than Asian cuisine. Many of the flavors, spices, and ingredients are unfamiliar to the South Asian palate.

Today, however, Italian food seems to be popular all over the world. In every Asian country I visit, I find Italian restaurants everywhere.

I am of Pakistani and Desi origin. When I was growing up, I never had Italian food. Now, however, I really enjoy eating it, and I've even begun making it at home.

Everyone loves pizza, which is probably the most popular Italian food in the world. I like pizza, too, but I don't make it at home. I'd rather go to my local pizza places: Pizza Club or Pizza Point.

When I make Italian food at home, the dish I like to make most is pasta. However, I don't follow the traditional Italian recipes; I like to add some Asian flavors and spices.

I am going to share two of my home recipes. My family loves them both, and my niece says both are her favorite!

The first one is chicken Stroganoff with pasta, and the second one is the kids' favorite: creamy white chicken pasta. Let's begin cooking!

Recipe 1: Chicken Stroganoff With Pasta

Ingredients

  • 400 grams pasta
  • 4 to 5 tablespoons oil
  • 1 head or bulb garlic, chopped
  • 1/2 kilogram chicken breast, cubed
  • 1 capsicum (green pepper), thinly sliced
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 teaspoon red chili powder
  • 1 teaspoon red chili flakes, crushed
  • 1 teaspoon white pepper
  • 4 tablespoons vinegar
  • 3 to 4 tablespoons hot sauce or chili sauce
  • 6 tablespoons tomato ketchup
  • 200 milliliters cream
  • 2 cups milk
  • Coriander, chopped, to taste

Instructions

  1. Boil the pasta according to the package instructions. Set aside.
  2. Add oil to a pot over medium heat. Add garlic and fry until it releases its scent. Add chicken and fry until its color changes to light brown.
  3. Add capsicum and continue cooking for about 2 minutes. Add all spices (salt, black pepper, red chili powder, crushed chili) and cook for a few more minutes.
  4. Add vinegar and hot sauce. Cook for 3 minutes. Add ketchup and mix well. Cook for another 5 minutes.
  5. Adjust the heat to low. Add cream and milk. Mix well. Cook for about 5 minutes on medium heat.
  6. Add cooked pasta to the pot. Add coriander. Mix well, cover, and cook at very low heat for about 10 minutes.
  7. Enjoy!

Recipe 2: Creamy White Chicken Pasta

Yields: 5 to 6 servings

Ingredients

  • 400 grams pasta
  • 4 to 5 tablespoons oil
  • 1 onion, chopped
  • 1/2 kilogram chicken breast, cubed
  • 1 tablespoon salt
  • 1/2 tablespoon black pepper
  • 1 tablespoon white pepper
  • 4 tablespoons vinegar
  • 3 tablespoons hot sauce
  • 200 milliliters cream
  • 2 cups milk

Instructions

  1. Boil the pasta according to the package instructions. Set aside.
  2. Add oil to a pot over medium heat. Add onion and fry until its color changes to light pink. Do not overcook the onion.
  3. Add chicken and fry for about 2 minutes. Do not overcook. It should be soft and juicy.
  4. Add salt, black pepper, and white pepper. Cook for about 3 minutes.
  5. Add vinegar and hot sauce. Cook for 3 minutes.
  6. Add cream and milk. Mix well. Cook for about 5 minutes.
  7. Add cooked pasta and mix well.
  8. Continue cooking for about 10 minutes on very low heat.
  9. Enjoy!
