What You'll Need

  • 1 tsp vegetable, olive, or coconut oil
  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • 3/4 cup quinoa, uncooked
  • 1 1/2 cup vegetable broth
  • 2 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 1 cup frozen or canned corn
  • 2 cans (540mL / 19 fl oz) black beans, rinsed and drained
  • 1/2 cup cilantro, chopped
  • salt and pepper to taste


  1. Heat oil in pan on medium heat; lightly brown onion and garlic.
  2. Add quinoa and broth. Add seasoning.
  3. Bring to a boil and cover. Reduce heat, let simmer 20min.
  4. Add corn, black beans, and cilantro. Let cook for ~10min.
  5. Remove from heat source and enjoy!
