The Quintessential Comfort Dish

As the weather cools, there's nothing better than a hot, comforting dish. Lasagna is a quintessential comfort food and relatively easy to make.

When I was a kid, this was never my favorite. I preferred stuffed peppers or meatloaf. However, now that I'm an adult, I've made it my mission to revisit those classic dishes that I didn't care for in an effort to see how my palate has changed. I've found that tweaking the recipe and making them myself has made all the difference, and surprisingly, I've grown to love the majority of them! This was certainly the case for lasagna.

What Makes This Lasagna Unique

Selecting a higher quality ground beef with less fat content prevented the dish from becoming greasy. Adding a panade (mixture of starch and liquid) to the beef ensured that the meat didn't dry out and overcook while in the oven. While I opted for cottage cheese instead of ricotta, mixing in the shredded mozzarella made the final result a hearty, cheesy dish. Basically, this is the best lasagna I've ever had.

Pair this lasagna with a side of Texas Toast garlic bread, top with as much Parmesan cheese as you'd like, and you'll have the perfect cool weather meal!

  • 2 pounds ground beef, 90% lean / 10% fat preferred
  • 16 ounces lasagna noodles
  • 1 tablespoon extra virgin olive oil
  • 4 slices white bread
  • 3/4 cup heavy cream
  • 1 (24-ounce) jar pasta meat sauce
  • 1 cup large curd cottage cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375 degrees.
  2. Brown the ground beef over medium heat. At the same time, begin to pull the noodles out of the package. Separate out the broken ones and then boil the noodles according to package instructions. Add 1 tablespoon of extra virgin olive oil to the water to help prevent the noodles from sticking.
  3. To begin making your panade, break the slices of bread up into pieces. Place them in a large mixing bowl. Pour heavy cream over top and let it sit for 1 minute. Then take a fork and combine.
  4. Once the ground beef is brown, mix in the panade. Continue cooking and stirring until panade is mixed in, turning the heat down to low.
  5. Stir the pasta meat sauce in with the ground beef, turning the heat back up to low medium. Allow it to simmer.
  6. As noodles cook, set them on a cutting board or cookie sheet. Put a little olive oil on your hands and rub the oil into each noodle to prevent the noodles from sticking. Set the noodles aside on a plate.
  7. Combine cottage cheese and shredded mozzarella in a mixing bowl.
  8. Spray a baking dish with nonstick spray. Place the baking dish on top of a cookie sheet.
  9. Begin assembling your layers in a 13x9 baking dish. Start with a generous portion of the meat, followed by noodles. Then add more meat, the cheese mixture, and a final layer of noodles.
  10. Cover with aluminum foil and bake for 30 minutes.
  11. Remove from oven. Take the aluminum foil off. Sprinkle additional mozzarella cheese on top and bake uncovered for an additional 10 minutes, or until cheese is golden.
  12. Serve generous portions with a side of garlic bread. Enjoy!
