Some people think “casserole” means an unrecognizable blob of mystery ingredients. Hopefully these recipes will be a pleasant surprise.

All casseroles are easy when it comes to cooking time. They're in the oven and require no stirring. Quick casseroles mean very little preparation time. All of these recipes take 45 minutes to one hour to bake, but you can use this time to prepare your side dishes, clean up the kitchen, check your email, or put your feet up.

I grew up preparing and eating most of these casseroles. We were a working-class family, so we looked for dishes like these: fast, cheap, easy-to-make, and tasty to boot!

Cousin Hal's Favorite Tuna Casserole

Ingredients

  • 2 cans cream of chicken soup
  • 1 large or 2 small cans of tuna, drained
  • 1 sleeve (36) saltine crackers
  • 2 1/2 cups shredded cheddar cheese

Directions

  1. Combine soup and drained tuna in a bowl.
  2. Grease a 9 x 9 casserole dish and smear two rounded tablespoons of soup mixture on the bottom.
  3. Arrange a layer of nine crackers. Spread about 1/4 of tuna and soup mixture over crackers. Sprinkle with 1/2 cup shredded cheddar cheese.
  4. Repeat crackers, then tuna and soup mixture. Sprinkle about 1 cup cheese.
  5. Repeat crackers, tuna, soup, and 1/2 cup cheese.
  6. Repeat crackers, tuna, and soup layers.
  7. Bake in preheated 350 degree oven until thoroughly warm, about 40 minutes.
  8. Remove from oven and top with remaining 1/2 cup cheese. Return to oven for 10 minutes.

Variations

  • Use your favorite cream soup.
  • Use any favorite cheese.
  • Use a 9 x 13 pan and do three layers, with three crackers across and four down.

Tater Tot Casserole

Ingredients

  • 2 cans cream of chicken soup
  • 1 soup can of milk
  • 1 1/2 lb ground beef, browned and drained
  • 1 bag of frozen tater tots

Instructions

  1. Brown ground beef. You can do this ahead of time to speed up preparation.
  2. Mix soup, milk, and drained browned ground beef.
  3. Grease a 9 x 11 casserole dish. Spread soup mixture on the bottom.
  4. Place a layer of tater tots on top.
  5. Bake in preheated 350 degree oven until thoroughly warm, about 40 minutes.

Variations

  • Use any favorite cream soup.
  • Top with cheese.
  • Place leftover french fries in the bottom of baking dish. Mix soup, ground beef, and a bag of frozen mixed vegetables, pour fries, and bake.

Chicken Pot Pie

Classic chicken pot pie, family style, with potatoes, corn, carrots, and peas.

Ingredients

  • 1 large can of flaked chicken meat
  • 2 cans cream of chicken soup
  • 1 can water or milk
  • 1 can or jar of chicken gravy
  • 2 cans mixed vegetables, drained or 1 bag frozen mixed vegetables
  • 1 can diced potatoes or 1 large potato diced, cooked, and drained
  • 2 deep-dish frozen pie shells, thawed
  • 2 regular frozen pie shells, thawed

Directions

  1. Cover bottom of greased 11 x 13 casserole dish with the deep dish pie crusts. Don’t worry if there are gaps.
  2. Mix soups, gravy, and water or milk in a bowl. Add vegetables and chicken.
  3. Pour mixture onto pie shells.
  4. Top with two remaining pie crusts. Again, don’t worry if there are gaps.
  5. Bake in preheated 350 degree oven for about 1 hour. Turn up oven temperature if needed to lightly brown crust.

Chicken Divan

A decadent treat! I like to use Dukes mayonnaise from the Sauer Company, the mayo of my youth.

Ingredients

  • 1 - 1 1/2 lbs boneless skinless chicken breasts or tenderloins
  • 4 cups long-cooking rice, cooked (do not use instant rice)
  • 1 bag frozen broccoli florets
  • 2 cans cream of chicken soup
  • 1 can milk
  • 1 cup mayonnaise
  • 1 1/2 tsp curry powder

Directions

  1. Mix soup, mayo, milk, and curry powder in a bowl.
  2. Mix half of soup mixture with rice.
  3. Grease a 9 x 11 or equivalent casserole dish. Spread mixture on bottom.
  4. Top with broccoli, then chicken. I use boneless chicken breasts which I trim into several pieces and partially cook in a skillet.
  5. Spread remaining soup mixture on top.
  6. Bake 60 minutes at 400 degrees.

Chicken and Dressing

Ingredients

  • 4 chicken breasts or 1 whole chicken cut into pieces
  • 1 small onion
  • 1 cup chicken broth
  • 3/4 cup milk
  • 2 eggs, beaten
  • 8 oz. stuffing mix
  • 2 cans cream of chicken soup

Directions

  1. Cook chicken. Remove bones and skin.
  2. Mix stuffing, onion, broth, milk, eggs, and soup. Add boned chicken.
  3. Grease 11 x 13 pan. Pour in mixture and bake for one hour at 350 degrees.

Chicken Joe

This is one my mom’s newly discovered favorites.

Ingredients

  • 3 chicken breasts, cooked and cut into bite-sized pieces
  • 1 can cream of chicken soup
  • 8 oz. sour cream
  • 1 sleeve Ritz or similar crackers
  • 1 stick butter

Directions

  1. Arrange chicken in greased casserole dish.
  2. Combine soup and sour cream. Pour over chicken.
  3. Stir together chicken and soup mixture.
  4. Crush crackers. You can do this by putting them in a plastic bag and rolling a bottle or rolling pin over them. Spread crushed crackers on top of casserole.
  5. Drizzle melted butter over top of crackers.
  6. Bake at 350 degrees for 45 minutes.

Shepherd's Pie

This is my version of a classic.

Ingredients

  • 2 ½ lbs. ground beef
  • 1 package onion or beef-onion soup mix.
  • Ingredients for meatloaf on soup packet, except ketchup topping
  • 3 cans corn, drained
  • 1 or 2 cans English peas, drained
  • 6 medium potatoes, diced, cooked and drained with some water reserved
  • 1 can evaporated milk
  • 1 cup parmesan cheese

Directions

  1. Make meatloaf according to soup mix directions. Note that I recommend 2 1/2 lbs. ground beef, which is more than the soup package calls for.
  2. Grease 11 x 13 pan. Pat meatloaf mixture in. Do not add tomato ketchup topping.
  3. Evenly spread corn and peas on top of meatloaf.
  4. In a bowl, mash the potatoes. Blend in as much milk as needed for consistency. Add some of the potato water if needed.
  5. Blend parmesan cheese into potatoes.
  6. Spread potato mixture over meat and vegetables. This is a little tricky! Try not to displace the peas and corn.
  7. Bake in preheated 350 degree oven about 1 hour.

Chef Ramsey's Shepherd's Pie

Ingredients

  • 1 1/2 to 2 lbs. hamburger
  • Seasoned salt
  • 2 cans tomato soup
  • 1 can water
  • 6 medium potatoes, peeled and sliced into rounds
  • 2 medium onions, peeled and sliced into rounds

Directions

  1. Mix seasoned salt into hamburger meat and form into 4 to 6 hamburger steak patties.
  2. Grease 11 x 13 pan. Arrange hamburger patties in bottom.
  3. Layer sliced potatoes and onions on patties.
  4. Blend soup and water. Pour over top of casserole.
  5. Bake covered one hour in 350 degree oven.

    Thanks for the comment CUSpacecowboy. I suppose any cream soup would work. I make my leftover French Fry casserole with vegetables, but haven't yet tried Tater Tot with veggies.

    The tater tot casserole tastes better when you make it with cream of mushroom soup instead of cream of chicken and add green beans. And another name for the Chicken Joe is Quick Chick.

    brneydgrls I usually go for something green, since the casserole is meat and potatoes. I like broccoli, asparagus, green beans, Brussels sprouts or a salad.

    Okay - here is my quick and cheap casserole recipe which I'm almost embarrassed to post.

    Make up a box of mac 'n cheese that you bought on sale, adding twice the amount of milk. Stir in 1 cup frozen veggies, then stir in 1 egg. Pour into buttered casserole dish. Bake at 350 until casserole still moves like jello but is not liquidy, about 30 to 40 minutes.

    Great hub! I am always looking for delicious and quick meals to make for my family. I think that I will be making the tater tot casserole and chicken pot pie soon...they sound yummy! In addition to casseroles, I use my crock-pot a lot because it is easy to prepare and clean up the meal.
