Best Chicken Salad Sandwich Recipe

My Quest for an Easy Recipe for Chicken Salad Sandwiches

Way, way back when I first got married and I was still trying to impress my husband (grin), I wanted to learn how to make chicken salad sandwiches. I wanted a chicken salad sandwich recipe that was not just easy, but delicious.

I experimented with over the years to get my easy chicken salad recipe just right; I spent a lot of time and effort perfecting it. I hit on what I believe is the best recipe ever. It's not just basic but has a bit of finesse. It's right at home at a kids' lunch table or a bridal shower buffet. It can be simple or elegant.

I have served this chicken salad many times over the years, and I have never failed to receive compliments and requests for my recipe. When the internet came along, I realized that many cooks will use the internet, not a cookbook, when looking for recipes. So here it is. Try this easy chicken salad sandwich recipe.

Easy Chicken Salad Sandwich Recipe

Ingredients (serves about 6)

  • 3 cooked chicken breasts, chopped
  • 1 or 2 stalks celery, chopped (about 3/4 cup)
  • 2 green onions, chopped
  • 1/2 cup seedless grapes, halved
  • 3/4 cup dried cranberries
  • 3/4 cup salad dressing, such as Miracle Whip
  • 2 tablespoons coleslaw dressing (Marzetti's is good)
  • 1 teaspoon paprika
  • 1 teaspoon seasoning salt
  • Coarsely ground black pepper, to taste

Simply mix everything together well. Chill for at least one hour before serving; it tastes much better if allowed to chill overnight.

Serve on toasted bread, croissants, or lettuce leaves. It also tastes great in pita pockets or hollowed tomato cups. Also try different breads such as ciabatta or raisin bread.

Grapes and cranberries in the salad, how great is that. I'm game. Tomorrow for supper. I'll let you know how it goes.

Thanks for the recipe

Angela! I had a couple of friends over for a late lunch today and made your chicken salad. It was a great success. I have enough left for supper, yum. Thanks for a great recipe.

Something I've found that's surprised me: chopped, de-seeded, de-membraned jalapenos go very well with chicken salad, especially one with green onions. The de-seeding and -membraning gets rid of the heat, and the jalapeno complements the other flavors.

Tasty hub! :P

Thanks, monoharv and sukritha for the comments.

Zsuzsy Bee, I'm so glad that you liked my chicken salad recipe. Actually, I plan on making some today. I really like recipes like this for the holiday season. I can just make some chicken salad, put it in the refrigerator, and everyone can eat whenever they get hungry.

Joyeuse, thanks for the tip! I never would have thought to add jalapeno to chicken salad. Since I love jalapenos, I'll have to give this a try.

It sounds delicious... and just looking at the picture made me hungry... not good for the pre-Christmas diet! But then, good things deserve special treatment no?

Can I use any salad dressing? and forget about the cranberries? I think we do not have them over here.

This sounds like a fantastic recipe! I want to make it for my husband, but he won't eat the cranberries or any kind of raisin substitute. Any suggestions?

Sounds really great going to try it.

Sorry I missed your comments, Princessa Kat07 and debby28.

Princessa, you can use mayonnaise instead of salad dressing. And yes, you can skip the cranberries. Add raisins if you wish.

Kat07, if your husband doesn't like cranberries or raisins, just leave them out. Chopped apples would be good, but not necessary.

Cassie 6 years ago

is it suppose to come out orange? the only seasoning salt that i could find was tasted good, but had a little spicy kick to that the way it is suppose to be?

Julie Meyer 6 years ago

I spent a lot of time going through old chicken salad recipes last night and found yours today. It sounds delicious and I can't wait to make it for a little "spring" luncheon I am having this week. Thanks, Angela!

I made this recipe for my daughter's baby shower in February & it was so good. I got so many compliments & requests for the recipe. The only thing I did different was to leave out the paprika. When I made a test recipe it was very orange & the flavor was strong. In my opinion the recipe is better without it. Thank you so much for sharing your AMAZING Chicken Salad recipe.

I made this recipe last night for dinner, after months of my hubby begging me to learn how to make chicken salad, and it was a HUGE success! Hubby, my dad, my 14 month old son, and I loved it! Thanks for such an easy, delicious dish!

Jess 6 years ago

I made this about a year ago (we loved it!) and just sat down to peruse the internet and hopefully find it again.. and here I did! It was a hit then and my husband and I are excited to try it again. It is getting bookmarked this time for sure. ;)

I have been making this for years and for those of you who are not using the cranberries are missing out. I don't like cranberries but they really add to chicken salad. I also add chopped pecans. I made it for an open house and knew that people would ask for the recipe. I made them up in advance and gave them to people who ask. Try the cranberries!!!!

danay 6 years ago

I made this and it taste so much better if you add sugar; )

Teri 6 years ago

Yum! I didn't have paprika, so I substituted dill weed instead... could also put parsley in it too!

Pam 6 years ago

How much does this make , if you measured the whole amount? or how much is a serving size? It says 3 breasts , how many ounces of meat is that?

Melanie Patterson 6 years ago

I always add 1 tsp of curry powder. It is a favorite at all my parties!

Barbara  6 years ago

This is by far the best chicken salad recipe I've ever tried! Next time I'm going to use paprika and1/2 tsp regular salt. Paprika and seasoned salt turn it alittle too orange. Great flavor!

Kesha 6 years ago

I've been searching high and low for a good Chicken Salad recipe. I'm going to try yours out tonight. It sounds delicious!

Idahowoman 6 years ago

This recipe rescued my old dull chicken salad - thanks for sharing.

Denvergirl 5 years ago

I think it's good - however the paprika turned the salad to an orange color which didn't seem very appetizing to me.

April 5 years ago

Wow. Made this for the first time & this is the BEST chicken salad I've ever had! Thanks so much for sharing. This will be a permanent recipe for our family!

Miguel 5 years ago

I'm going to go against everybody here and say I didn't like it. It was way too sweet for what I would consider a normal chicken salad. Chicken salad should be mostly savory not sweet.

nunya 5 years ago

miguel if you use mayo it wont come out sweet...mircle whip and other salad dressing brands have more sugar added to them

kenzilynn 5 years ago

Sounds good but mine is better

you use chicken, a little mayo and red hot spicy and good

Jazma Jo Baker 5 years ago

This recipe looks great, I'm taking the advice of the comments and leaving out the paprika and cranberries as i think it'd ruin it for me.

I'm cooking this tomorrow in my food and nutrition class, I'm having to use Quorn style chicken as I'm on my veggie year...hope the effect will still be the same!! :s xoxoxo

britmum 5 years ago

this by far the best chicken salad sandwich. travel to may a places and mmm cant beat this sandwich. thanks for the recipe.

Okay, finally taking the time to comment. Three summers ago I started making this recipe. It is outstanding and needs no adjustments. Not everything has to be spicy! :) Thanks for an outstanding recipe and for sticking with it til you got it right!

Thank you for posting this. I was looking for something that I could take to a church "soup" social. I didn't want to bring a dessert like everyone else and wanted something that would pair well with different kinds of Soup. I think I am going to do them in croissants and the hollowed tomato cups just to add variety.

y.phillips 4 years ago

WOW,I made the chichen salad, it is so good, I'm suppose to take it to a Christmas party at my church, but I can't stop eating thank FOR THE RECIPE.

Crys' 4 years ago

It's me again. I'm sorry but every time I make this recipe I whisper you a lil' THANK YOU.yummmmmmmyyyyyyyy it is. In addition to adding the green apples, I use a RED ONION for extra tastiness.......Wow! Thanks again. It tastes like a whole new sandwich each time I make it.

Anna 4 years ago

i tried this recipe with some slivered almonds that i just threw in a pan instead of the cranberries to add some of a crunch, very tasty.

Awesomeness is the correct word to describe this recipe except do you fry the chicken or cook it

I just made this to take to Easter lunch with family tomorrow. I sampled it and even before it has chilled it already tastes yum-licious!! Can't wait to share with everyone, or maybe not; ) I had Helmann's on hand so just added a little extra cole slaw dressing to give some zing. Thanks for the recipe!
