Why Vegetables Are Good for You

I'm always looking for new chicken dinner recipes for weeknights—something easy and with vegetables so it's also nutritious.

Broccoli is a good source of fiber and protein, as well as vitamins A, D, E, and K.

Mushrooms are rich in B vitamins, including riboflavin, niacin, and pantothenic acid, all of which help to protect heart health. Riboflavin is good for red blood cells, and niacin is good for the digestive system as well as for maintaining healthy skin.

Many children are not fans of vegetables, but if you top it with a cheesy sauce or a creamy sauce like Alfredo, they will at least try it and maybe even finish it.

So give this chicken and vegetable recipe a try and enjoy.

Ingredients

  • 3 skinless and boneless chicken breast fillets, pounded thin
  • Salt and pepper, to taste
  • 8 ounces mushrooms, halved or sliced
  • 1 to 2 tablespoon extra virgin olive oil
  • 1 lemon, juice and rind
  • 3 cups broccoli florets
  • 1 (10-ounce) jar Alfredo sauce, any brand

Instructions

  1. Season the chicken with salt and pepper. In a large skillet, brown the chicken and mushrooms for minutes in hot oil, turning the chicken halfway through.
  2. Meanwhile, grate the rind off of the lemon, cut it in half, juice it, and set it aside. Add the broccoli, lemon rind, and juice to the skillet. Cover and cook for 8 minutes or until the chicken is done.
  3. Place the chicken and vegetables on a serving plate. Add the Alfredo sauce to the skillet and heat through. Spoon some of it over the chicken and vegetables and serve. Save the rest of the sauce in a separate bowl to be used during dinner.
