With all of the meals I make over here every day—not counting the bread, tortillas, chips, granola, and crackers that I make every week to keep us stocked—sometimes it's difficult for me to get photos of everything. This meal was no different. The baby had a late nap, and I had only 30 minutes to pull something together quick.

That is one reason I love my Instant Pot. Granted I could make the same meal in a big pot on the stove, but I love being able to set it and forget it. I could then clean up a little around here before my husband walked in the door.

This is one of those toss-in-anything-that-sounds-good kinds of recipes, but I use all of my own canned or prepared food products, making this one super-healthy meal. Chili is also one of those great hot meals that fill you up and get you ready to settle down for bed soon after dinner. I really needed this last night. Yesterday was rough for both of the kids. It must be a full moon outside.

Sawyer is teething and just got his front two teeth in, and Elliot is still adjusting to the move, losing his friends and his chickens back in Arizona, and having a new baby brother, all at the same time. We really needed something quick and easy, and filling right before bed to end the evening on a positive note. Thank goodness they both seemed to love the chili and the rest of the evening was as smooth as could expect in this circus.

Yields: Serves 6 adults

Ingredients

  • 1lb hamburger
  • 1 onion, chopped finely
  • 1 quart (4 cups) baked beans, with juice
  • 1 pint (2 cups) black beans, with juice
  • 1 pint (2 cups) black eyed peas, with juice
  • 1 pint (2 cups) tomato sauce
  • 1 pint (2 cups) beef broth
  • 1 tablespoon chili powder
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon cumin
  • 1/2 teaspoon pink Himalayan salt
  • Enough water to cover the ingredients

Instructions

  1. If your hamburger is not cooked, add that and your chopped onion into the Instant Pot set to Saute and stir until your hamburger is fully cooked.
  2. Turn off the heat and add all of your beans.
  3. Add your tomato sauce and broth.
  4. Add all of your seasonings.
  5. And finally add water until your ingredients are covered.
  6. Close and lock the lid, and set your Instant Pot to Manual for 10 minutes.
  7. All of your ingredients are cooked going in so you can choose to naturally release the pressure or use the quick release.
  8. Serve with lots of cheese. It's so good you won't want chips. Enjoy!

I think we each had two bowls of chili for dinner last night and I ate it again for lunch today. It was delicious. I love chili, but my favorite part of this dish was the mixture of the three types of beans. Pintos, black beans and my favorite, black eyed peas all gave this dish a unique flavor. Yum!

If you are looking for some fast and easy dump recipes that you and your kids can make together, this is one great recipe that is sure to spark your kids' fancy and get even the pickiest of eaters interested. However, I find that whenever my kids can get involved in the cooking process, especially when we are using items that they helped to can in the first place, they also tend to enjoy the meal more.

My toddler is always so excited to help out. He likes to see the whole process, and be allowed to do even the hardest of stuff all by himself. It may take a tad bit more patience on my part, but I think (hope) that it will all be worth it in the end. We didn't serve our chili with anything because, well, it was so good that no one wanted anything with it. But some cornbread, corn casserole, or even some homemade chips would go well with it if you need something extra on the side.

What Does "Clean Eating" Mean?

Clean eating simply means eating no processed foods or refined ingredients. I cook with all-natural ingredients only, like whole wheat flour, coconut sugar, organic honey, coconut oil, etc. I don't use any canned ingredients, store-bought mixes or extracts, or even dressings or spice mixes that I didn't make myself. I also use grass-fed, full-fat, organic meats and dairy products. This is all part of my effort to keep chemicals, preservatives, hormones, and antibiotics out of my family's bodies.
