A perogie is a dough that is stuffed and resembles a dumpling. It is most popularly stuffed with any combination of cheese, potatoes, sauerkraut, bacon, onions, meat, blueberries and strawberries. Once the dough is made and the perogy is stuffed, the dumplings are boiled until the dumplings float above the water. They can be consumed as is, or alternatively they are often fried or baked, depending on taste. Pierogies are a traditional dish that originated in Eastern European countries of Slavic descent and are spelled in a variety of ways including perogie and pyrogy.

They are usually served as a side dish to other Slavic food such as stuffed cabbage. In my household perogies are eaten very frequently and it is nice to change up how they are served. I had heard of people serving perogies in a casserole and decided to try this for myself. I am very satisfied with the result: with this recipe you get a great alternative to a very popular food, and cooking them this way created a hearty dish that is transformed from an accompaniment into a main course.

  • 1 large casserole dish
  • 4 cups onion soup, (or any soup of your choice)
  • 3 cups ground beef
  • 25 -30 perogies
  • 1 yellow onion, chopped
  • 3 cups cheddar cheese, grated
  • 4 tablespoons parmesan cheese, grated
  • 2 green scallions, chopped
  • 6 strips of bacon, minced


  1. Preheat the oven at 350 degrees Fahrenheit. In a large skillet, fry the ground beef allowing it to brown. Once the ground beef is cooked, place in a colander, allowing the fat to drain from the beef. Place the perogies into the casserole dish (They can be either frozen or fresh). Next pour the soup into the casserole dish. Add the ground meat, and chopped onion. Stir the mixture making sure that the ingredients are distributed evenly.
  2. Top with cheddar cheese. Then sprinkle the green scallions, bacon and finally the parmesan cheese. Place the casserole into the preheated oven for about 35 to 40 minutes or until the top layer has melted and turns brown. Once the cheese from the casserole has browned, remove it from the oven, allow it to cool and then serve.

        I love homemade perogies and sometimes make them myself. I've never had this delicious casserole, though. Thank you for your recipe! I look forward to trying it.

        @rjsadowski thanks for the comment! Homemade pierogies are much, much better than the store bought kind! I can understand why there aren't any leftovers!

        What a unique approach. When I make pierogis there are never any leftovers but I will try this with purchased frozen pierogies.
