A Simply Delicious Crock-Pot Chili Recipe

As we enter the month of January, many of us are experiencing extremely cold temperatures. Winter always makes us crave warm, comforting meals, but no one wants to spend a ton of time in front of the stove cooking.

Chili is one of my favorite dishes. It's simple and takes very little prep time. It's completely customizable and the best part is that there is usually enough left over for at least another day or two.

Recently, I asked my friends on Instagram if they wanted me to share my recipe. It was a resounding yes.

There isn't much to it. You only need five ingredients, your crock-pot or slow cooker, and a skillet. Let's get started!

Ingredients

  • 1.5 - 2 lbs. Ground Beef
  • 1 can Tomato Juice
  • 3 cans Light Red Kidney Beans
  • 1 - 2 cans Tomato Paste
  • Chili Seasoning

Instructions

  1. Plug in your crock pot. Turn it to high.
  2. Pour tomato juice into the pot.
  3. Open and drain kidney beans. A great tip is to fill the can with cold water and rinse the beans after draining the juice a few times. This cuts back on that "bean flavor."
  4. Carefully add kidney beans to the pot.
  5. Open and spoon in the tomato paste. If you like your chili on the thicker side, use two cans of tomato paste.
  6. Sprinkle a little bit of chili seasoning into the pot. Stir all the ingredients together.
  7. While the pot heats up, brown ground beef in a skillet over medium heat.
  8. Drain ground beef and then add it into the pot.
  9. Stir. Allow the chili to cook on high for 3 - 4 hours. You could also cook it on low for about 6 hours.

In serving bowls, ladle a few scoops of chili. Allow everyone to customize their chili to their tastes. I love adding shredded cheese, onions and green peppers to mine. I also add a bit of hot sauce to spice it up! In the summertime, I love adding in fresh jalapeƱo peppers. My husband likes to add shredded cheese, oyster crackers, and a dollop or two of sour cream. Be sure to have plenty of Saltine or Ritz crackers handy for dipping!

Chili is always best the day after you make it. Eat it as is, or you could whip up homemade fries for chili cheese fries. It would also be delicious served over crock-pot hot dogs for chili cheese dogs. The possibilities are endless!

      Yes, Linda, you should definitely get a crock-pot. There are so many meals you can make with little effort. For the first year and a half after we moved in to our new house, we only had a crock-pot and a microwave. I had to get creative with meals and become well-aquainted with my crock-pot. :)

      I agree, Bill. Chili is delicious! It just makes sense to have it on a cold winter day. But, I do love it in the summer once in awhile, especially because it's so low maintenance. :)
