How to Make a Mouthwatering Enchilada Casserole

Warm, Filling, and Delicious

A true comfort food, enchilada casserole is a wonderful way to avoid the mess and hassle of traditional enchiladas.

Super simple, just layer the ingredients and bake. Enchilada casserole tastes great and is quick and easy! It's perfect for a cool night when you don't want to fuss and just want something filling and good.

Ingredients

  • 1 lb Ground Beef
  • 1 package Taco Seasoning
  • 10-12 Corn Tortillas
  • 1 can Enchilada Sauce, 28 oz
  • 3 cups Shredded Cheese
  • 1 can Black Olives, sliced (opt)
  • 2 Tbsp. Green Onions, sliced (opt)
  • 1 cup Sour Cream, (opt)

Instructions

  1. Brown hamburger.
  2. Mix taco seasoning with browned hamburger and any ingredients required by the seasoning pack you are using.
  3. Spray cooking spray on casserole dish.
  4. Pour enchilada sauce in shallow dish, then dip tortillas one by one into it.
  5. Place one layer of dipped tortillas in the dish.
  6. Top tortillas with seasoned hamburger, then shredded cheese.
  7. Add another layer of enchilada-sauce coated tortillas. Then more hamburger and more cheese.
  8. Keep adding layers until the casserole dish is filled.
  9. Top with black olives and green onions, then bake 350* for about 45-50 minutes or until cheese is melted and enchiladas are cooked through.

Brown the Hamburger

Place the hamburger in a large frying pan set on high heat, and cook it until it's brown and crumbly, stirring often.

Add the Taco Seasoning

When the hamburger is browned, add the taco seasoning, and anything your mix requires (mine required me to add 3/4 cup of water to the mix).

Cook according to package instructions. The brand I used required me to simmer the hamburger, water, and seasoning mix for 15 minutes, stirring occasionally.

Cut up the Tortillas

You can use whole tortillas in the Enchilada Casserole, but they're easier to work with and fit better in the baking dish if you cut them in half.

I just use a pair of scissors and simply snip them in half. You can also just tear them in half if you don't have scissors or a knife handy.

Pour the Enchilada Sauce into a Dish

Pour the enchilada sauce into a broad, flat-bottomed dish that the tortillas can easily fit into. I usually just use a dinner plate.

Spray Pan with Cooking Spray

Coat the bottom and sides of the baking dish thoroughly with cooking spray.

Enchilada Casserole and most other dishes would look wonderful if served in this pretty dish.

Remember, everything looks better when served in a nice dish like this one.

Coat the Tortillas

Dip a tortilla piece into the enchilada sauce, making sure to thoroughly coat each side with a liberal amount of sauce. Then lay that in the bottom of the baking dish.

Continue coating the tortillas and placing them in the baking dish until they cover the bottom of the pan.

When I have an odd shaped dish, I will often rip a couple tortillas into smaller pieces to fit the corners and edges better. This depends on what's needed for the shape of your baking dish though.

Add Hamburger on Top of the Corn Tortillas

On top of the sauce-coated tortillas, add about a third of your browned and seasoned hamburger mixture. Spread it out so it's evenly distributed.

Add Cheese to Enchilada Casserole

Top the tortillas and hamburger with a generous helping of the shredded cheese. In my opinion the more cheese, the better.

Add Another Layer to the Casserole

Repeat the first layer, adding enchilada sauce coated tortillas, then a portion of the seasoned hamburger, and topping again with shredded cheese.

Finish Adding Layers

Depending upon the depth of your baking dish and the thickness of your tortillas, usually three layers fills the pan nicely. You can had more layers if needed to fill the dish.

So, add layers of tortillas, hamburger, and cheese, until you finish it off.

Top the Casserole with Olives and Green Onions

Top the casserole with sliced black olives, and if you wish, green onions (not shown in picture).

Bake the Enchilada Casserole

Slide the casserole into a preheated, 350 degree oven and bake it.

Cook Until Done

Bake the casserole at 350 degrees for about 45-50 minutes.

When done the cheese should be slightly toasted and melted and gooey, and the dish should be heated through.

Serve Warm and Gooey

Dish up a portion of the enchilada dish and add a generous dollop of sour cream to the top.

Enchilada Casserole is best served with a side salad or Spanish rice. For a very tasty complete meal, have some chips and guacamole for starters and finish off with some flan or cinnamon ice cream.
