Recipe #1: Avocado and Almond Salad

Ingredients

  • 1 medium avocado, chopped
  • 4 small sprigs cilantro, chopped
  • 1 medium roma tomato, chopped
  • 1/4 cup onion (white or red), finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup raw almonds, whole, shelled
  • balsamic vinegar, drizzle to taste
  • fresh lime juice, optional
  • olive oil, optional (just a drizzle)
  • course ground pepper, optional

Lightly stir all of the ingredients together and serve chilled in a salad bowl. Also, this serves as a great filler for pita pockets, or as a topper for flatbread.

Recipe #2: Baby Spinach and Avocado Salad

Spinach Salad: Baby spinach, avocado slices, fresh orange bits, almonds, feta cheese and sliced strawberries.

Ingredients

  • 4 cups loosely packed baby spinach
  • 1 large orange, peeled, seeded and chopped into bite size pieces
  • 1 large avocado, halved and sliced
  • 4 large strawberries, sliced
  • 1/4 cup almonds, shelled and natural
  • 1/3 cup feta cheese
  • Divide all the ingredients equally into two portions. Serves 2.

Preparation:

  • Divide the spinach in half and lay evenly across two chilled dinner plates.
  • Evenly spread the orange bits over the spinach.
  • Next, add a layer of the feta cheese.
  • Sprinkle the top with almonds.
  • Garnish with slices of avocado and strawberries.
  • Enjoy with your favorite dressing. Suggestions: Honey mustard compliments the flavors of avocado and spinach. A drizzle of Balsamic Vinegar is my personal favorite.

      These all look delicious! I had a grilled ham, cheese and avocado sandwich for lunch today, but that didn't even use half of an avocado so I have more wiating in my fridge for a use! Looks like I'll be trying one of these recipes soon :)

      All of these recipes look delicious. I had made guacamole the other day for fajitas and I hid 1/2 of it in the fridge for myself to spread on a sandwich for the next day. I love anything with avocados.

      Hi missolive, What a yummy collection of recipe's using one of my favorite foods - avocado. Did you know avocado's are also very rich in healthy fats - my Doc. recommended I eat more of them to raise the healthy fat number in my blood.

      I never thought of using an avacado for homemade salad dressing - I'm going to try this one for sure.
