Amazing Balls!

These delicious coconut and chocolate balls are a delicious treat that is:

  • low in sugar, carbs, and protein
  • high in fat

and contains no:

  • Gluten
  • Dairy
  • Nuts
  • Eggs

It is vegan and vegetarian-friendly.

Preparation Time

Prep time: 30 min
Ready in: 30 min
Yields: Makes 15-20 balls

Ingredients

  • 150g Coconut, desiccated
  • 1/2 cup Coconut oil, liquified - if hard, place it in a bowl in the microwave to liquify it.
  • 30g (1/4 cup) Coconut flour
  • 1/4 to 1/2 cup Chocolate or cacao powder, sugar-free
  • 1/2 cup Coconut milk, full fat, as it usually contains less sugar and carbs than low-fat/light versions
  • 1/4 to 1/2 teaspoon (optional) Salt, Himalayan Rock Salt
  • Desiccated coconut Optional extra for coating the balls
  • Optional - add to taste Artificial or natural sweetener, Not sugar. I use Stevia whenever I want to add some sweetness.

Instructions

  1. Place the extra desiccated coconut in a bowl on its own if you are going to coat the balls in it.
  2. Combine all other ingredients in a large bowl and mix well with an electric mixer. The mixture should look crumbly but it should be sticky enough to not crumble when pressed together, see photos below.
  3. Rolls the mixture into balls to the desired size then roll them in the extra coconut to coat them - you can omit this step if you choose not to coat them.
  4. Place the balls on a plate and leave them in the freezer for 30 minutes to harden.
  5. Remove from the freezer and they are ready to eat.
  6. These balls should be stored in an air-tight container in the fridge to keep them hard and fresh. They will keep fresh for up to two weeks if kept refrigerated.

      There was already some Stevia in the chocolate powder I used, but feel free to add some in yours.

      I'm always looking for great lchf treats to satisfy that sweet craving and at first glance, these looked like they fit the bill. But I was surprised and disappointed to see eggs in the recipe with no cooking or baking involved. Raw eggs carry salmonella. So sorry Sleepylog, even though they look delicious, the Amazeballs can make you really sick, so I won't be making these. :(

      Since some of you are concerned about the risk of Salmonella poisoning. I myself have eaten raw eggs my entire life and have never been sick from doing so, but I can understand why some of you prefer not to use them. I guess if I ever get Salmonella poisoning I will reconsider my choice to use raw egg. For those of you who choose not to use raw eggs, I have now included a list of alternatives for raw eggs that could possible be used in this recipe.
