Tomato Soup and Grilled Cheese Sandwich Combinations

Salt and pepper. Oil and vinegar. Peanut butter and jelly. Cake and ice cream. Simon and Garfunkel. All of these things just naturally seem to go together, don’t they? Allow me to add one more pair to the list—tomato soup and grilled cheese sandwiches.

OK, so my friends in other parts of the world might be scratching their heads a bit, but for people who live in the USA, a steaming bowl of tomato soup combined with a toasty, gooey grilled cheese sandwich is comfort food at its best.

This is the go-to meal when funds are short, or the children are clamoring for dinner; perhaps you are a poor college student, living alone, or just too darned tired to cook a decent meal.

Tomato soup (from a can) and a grilled cheese sandwich (a slice of processed cheese tucked between two slices of white bread) provides nourishment, sustenance, and calm in a harried world. Such a simple, humble meal.

Can it be changed, elevated, maybe (dare we even think) glorified? In the CarbDiva world, “yes we can!”

Here are some new ideas for tomato soup recipes. And just for fun, I've also assembled a list of ingredients for new grilled cheese sandwiches to complement the flavors of those unique soups.

Carb Diva's Triple Tomato Soup With Chicken, Cheddar, and Avocado Grilled Cheese

Ingredients

  • 2 (14-oz.) cans diced tomatoes
  • 2 tablespoons olive oil, divided
  • 1 large onion, diced
  • 1/2 cup celery, diced
  • 2 cloves garlic, minced
  • 3/4 cup sundried tomatoes (not oil-packed)
  • 1/2 of a 6-oz. can tomato paste (no salt added)
  • 1 (14-oz.) can chick broth
  • 1 tablespoon fresh sage, minced
  • 1 bay leaf
  • 2 tablespoons fresh parsley, minced
  • 2 tsp. lemon juice

Instructions

  1. Preheat oven to 450 degrees F.
  2. Strain canned tomatoes, reserving juices. Spread canned tomatoes on large baking sheet. Season with salt and pepper to taste. Drizzle with 1 tablespoon olive oil. Roast in oven about until caramelized, about 30 minutes.
  3. Meanwhile, sauté onion, celery, and garlic in large saucepan until softened, about 10 minutes.
  4. Add the roasted canned tomatoes, reserved tomato juices, sun-dried tomatoes, broth, sage, and bay leaf. Simmer until vegetables are very tender, about 20 minutes.
  5. Remove bay leaf. Puree soup in pot with immersion blender until smooth. Stir in chopped parsley and lemon juice. Taste and adjust seasoning as needed.

Chicken, Cheddar, and Avocado Grilled Cheese

Bread: Sourdough

Cheese: Sharp cheddar

Meat: Shredded rotisserie chicken

Fruit or Vegetable: Sliced avocado

Condiment: Chipotle mayonnaise

Ingredients

  • 2 (14-oz.) cans diced tomatoes
  • 2 tablespoons olive oil, divided

Bread: Rustic Italian

Cheese: Fresh mozarella

Fruit or Vegetable: Fresh tomato slices and basil leaves

Condiment: Drizzle of balsamic vinegar

Orzo, Tomato, and Spinach Soup With Greek Sandwich

Ingredients

  • 2 tablespoons olive oil
  • 1 1/2 cups chopped onions
  • 1 cup finely diced carrots
  • 1 cup finely diced celery
  • 4 garlic cloves, minced
  • 6 1/2 cups chicken stock
  • 2 (14-ounce) cans petite diced tomatoes
  • 2 tablespoons basil pesto
  • 1 1/2 cups whole wheat orzo
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 3 cups baby spinach, packed

Instructions

  1. Heat oil in a large Dutch oven over medium-high heat. Add onions and sauté until softened, about 5 minutes. Add carrots, celery, and garlic; sauté for an additional 2 to 3 minutes. (Don’t let the garlic burn).
  2. Add the stock, pesto, orzo, thyme, and oregano. Stir well.
  3. Reduce heat to medium and simmer, stirring occasionally, until orzo is cooked, 10 to 12 minutes.
  4. Stir in spinach; cook until spinach is wilted, about 1 to 2 minutes more.

Greek Sandwich

Bread: Rustic Italian

Cheese: Feta cheese combined with whipped cream cheese

Fruit or Vegetable: Fresh tomato slices

Condiment: Kalamata olives and tzatziki sauce

Pizza Soup With Pizza Grilled Cheese Sandwich

Add 1/3 cup diced pepperoni to the Carb Diva triple tomato soup recipe (above). Garnish with grated mozzarella cheese.

I don't do tomatoes, mushrooms and spinach at the same time. Just different ways to add extra flavor and texture to a grilled cheese. The spinach is especially good with provolone. Yum!

I haven't tried coconut oil, but my older daughter uses it quite a bit. Maybe I'll take a little when she isn't looking.

The orzo, tomato, spinach soup looks yummy. I love spinach and orzo is the perfect pasta for any soup.

I also love grilled cheese. I like to experiment with them. One thing I've done is I no longer spread butter on the bread before grilling. Instead, I spread coconut oil. I can't taste the difference and it's better for you. I like to put tomato, mushrooms or spinach in between the cheeses and add a touch of garlic power to give the bread flavor. Grilled cheese is great on pumpernickel or marble bread.

Yum. I think I know what I'm having for dinner tonight!

Tomato soup made fresh with a sliver of bacon and a huge chunk of fresh bread is a winter staple in our house.

The cheese toastis with it have been tried and are really yummy.

Carb Diva, all those tomato soup recipes look great, so does the grilled cheese sandwiches. I love both but have never thought of having them together, now I am going to try that. My favourite grilled cheese sandwich usually contains cheese, sliced jalapeno (or other) chilli and chopped garlic chives, salt and pepper.

I would love to try these soups and with fresh tomatoes I have been freezing myself. Yum I bet they would be so good and of course I love grilled cheese and tomato soup! Tomato soup is delicious with tuna sandwiches too. (But that's another hub, right? lol)
