5 Yummy Pumpkin Recipes for the Fall (Plus 3 Bonus Videos)

Cooking With Pumpkin in the Fall

Pumpkin pie is one of our family's holiday favorites, but there are many other delicious ways to incorporate this gourd into your fall cooking. Our family enjoys all of the traditional favorites: cakes, muffins, cookies, and even soup. Any of these easy recipes will help make your fall or winter holiday celebration a big success. For me, holiday baking brings back happy memories of Mom teaching my sister and me how to make tasty seasonal treats.

I am also including a recipe for easy pumpkin pie cupcakes, which are just perfect for Halloween. I have provided detailed instructions (including photos of how to bake a pumpkin), which means even a novice cook can whip up a batch! You can use the canned puree or "the real thing," baked or boiled and peeled. I hope you enjoy these cupcakes as much as we do.

Recipe 1: Pumpkin Cake With Vanilla Buttercream Frosting

My mother, Ruth Lelong, used to make this delicious cake around the holidays. In North Louisiana, where I grew up, we shared recipes readily—and in fact, my mother submitted this one to the 1971 edition of Country Cookin' Recipes, which was compiled by the Riverdale Academy Booster's Club. This cake can be served at any fall or winter holiday celebration.

Yields: 25

Cake Ingredients

  • 2-1/4 cup cake flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1-1/2 tsp ginger
  • 1/2 tsp allspice
  • 1-1/2 tsp cinnamon
  • 1/2 cup butter
  • 1 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 1 egg and 2 egg yolks
  • 3/4 cup buttermilk or sour cream
  • 3/4 cup canned pumpkin
  • 1/2 cup chopped nuts

Cake Instructions

  1. Combine flour, baking powder, salt, baking soda, and spices. Mix together and set aside.
  2. Cream butter.
  3. Gradually add sugar and cream well.
  4. Add egg and egg yolks, one at a time, beating until light.
  5. Add flour mixture, alternately with buttermilk or sour cream, in small amounts.
  6. After each addition, beat until smooth.
  7. Add pumpkin and nuts.
  8. Mix well.
  9. Bake in 9x13 inch greased pan in oven at 350 degrees for 30 minutes or until done, using the toothpick test.
  10. Let it cool and either turn it out onto a cookie sheet or just leave it in the pan and frost it.
  11. Frost with vanilla buttercream frosting (recipe below). If desired, you may add 1/2 cup chopped nuts to frosting.

Frosting Ingredients

  • 1/2 cup soft butter or margarine
  • 3 cups confectioners' sugar
  • 1-1/2 tsp vanilla
  • About 2 Tbsp milk

Frosting Instructions

  1. Blend butter and sugar.
  2. Stir in vanilla and milk. Beat until frosting is smooth and of spreading consistency.

Today, you can get some pretty tasty ready-made icings at the grocery. The cream cheese one goes really well with this cake.

Recipe 2: Pumpkin Muffins

You'll love these tasty muffins that are good for breakfast, dinner, or dessert.

Cook time: 20 min
Ready in: 35 min
Yields: 12 muffins

Ingredients

  • 1-1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup milk
  • 1/2 cup canned pumpkin
  • 1/4 cup butter or margarine, melted
  • 1 egg
  • 1/2 cup raisins or chopped nuts, optional

Instructions

  1. Heat oven to 400 degrees F.
  2. Grease bottoms of 12 medium muffin cups (2-3/4 inches in diameter).
  3. Mix all ingredients just until flour is moistened. Batter should be lumpy.
  4. Spoon batter into muffin cups, filling each 2/3 full.
  5. Sprinkle 1/4 teaspoon sugar over batter in each cup.
  6. Bake 18-20 minutes.
  7. Immediately remove from pan.

Betty Crocker's Cookbook

The recipe for these muffins comes from Betty Crocker's Cookbook: Everything You Need to Know to Cook Today. As a newlywed, many years ago, I don't know what I would have done without my copy of this book. It tells you how to cook and bake just about everything and gives easy-to-follow directions with illustrations. I still use my original copy today.

Recipe 3: Pumpkin Pie Cupcakes

These yummy little treats are perfect for a children's party and are simple enough for the kids to help prepare. The recipe is one of the boo-lishous ones in Wormy Apple Croissants and Other Halloween Recipes, by Brekka Hervey Larrew.

Ingredients

  • 1 package yellow cake mix
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 (12-ounce) can evaporated milk
  • 1 (15-ounce) can pumpkin
  • 3 large eggs
  • 2 Tbsp vegetable oil
  • 1 (16-ounce) can cream cheese frosting
  • 2 drops orange food coloring
  • 1 tube of black decorating icing or candy corn

Instructions

  1. Place cupcake liners into a muffin pan.
  2. In a large mixing bowl, combine cake mix, cinnamon, and nutmeg. Stir together with a rubber spatula.
  3. Add evaporated milk and canned pumpkin to bowl.
  4. Add eggs and vegetable oil to bowl. Combine ingredients together with an electric mixer on medium speed for 2 minutes.
  5. Spoon batter into baking cups, filling each 2/3 full.
  6. Bake for 25-30 minutes.
  7. Use an oven mitt or potholder to remove the cupcakes from the oven and cool for 20 minutes.
  8. In a small bowl, mix frosting and food coloring with the rubber spatula.
  9. Use the same spatula to frost each cupcake.
  10. Decorate with black icing, raisins, or candy corn to form eyes, a nose, and a mouth on each jack-o-lantern.

Recipe 4: Pumpkin Cookies

These yummy cookies are great for Halloween or anytime, and all the little ghosts and goblins will love them. The recipe comes from one of my favorite cookbooks, Betty Crocker Cookie Book.

Ingredients

  • 1-1/2 cups brown sugar (packed)
  • 1/2 cup shortening
  • 2 eggs
  • 1-3/4 cups canned pumpkin
  • 2-3/4 cups all-purpose flour
  • 1 Tbsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/4 tsp ginger
  • 1 cup raisins, optional
  • 1 cup chopped pecans

Instructions

  1. Heat oven to 400 degrees F.
  2. In a bowl, mix sugar, shortening, eggs, and pumpkin thoroughly.
  3. Measure flour by dipping method or by sifting.
  4. Blend dry ingredients. Add to pumpkin mixture, stirring until well blended.
  5. Add raisins and pecans.
  6. Drop batter by teaspoonfuls on ungreased baking sheet.
  7. Bake 12-15 minutes or until lightly browned.
  8. Cookies may be iced when cool with a thin butter icing.

Makes about 6 dozen cookies.

This updated version has most of the same outstanding cookie recipes as the circa late-1960s version, complete with illustrations and easy-to-follow directions. Recipe 5: Hearty Pumpkin Soup

This delicious and easy-to-make recipe for a hearty soup came from Kids' Pumpkin Projects Planting & Harvest Fun, by Deanna F. Cook. It's written with younger cooks in mind.

Ingredients

  • 1 medium-sized pumpkin
  • 4 cups (1 liter) chicken broth
  • 1/4 cup (50 ml) maple syrup
  • 1 Tbsp (15 ml) butter or margarine
  • 1/2 tsp (2 ml) cinnamon
  • 1/2 tsp (2 ml) nutmeg
  • 1/2 tsp (2 ml) salt

Instructions

  1. Preheat the oven to 350 degrees F (180 degrees C). Slice the pumpkin in half and scoop out the seeds. Place the halves cut-side down on a buttered cookie sheet. Bake for 1 hour.
  2. Use a big metal spoon to scoop out the pumpkin flesh into a bowl. Mash the flesh with a potato masher.
  3. In a heavy saucepan, combine the pumpkin with the rest of the ingredients. Warm over low heat, stirring occasionally.

Notes

  1. Serves 6 to 8 kids a hot, hearty meal.
  2. Other types of winter squash can also be used instead of pumpkin to make a delicious, hearty soup.
