We’ve really been enjoying all the wonderful pumpkin and apple dessert recipes this fall. However, it can be nice to take a break from those spicy flavors and visit the tastes of summer, one more time before winter arrives. TikTok content creator @succulentbite shows us his recipe for blueberry loaf cake and we are so happy to see those beautiful berries again!

This cake looks so bright and cheery and so very moist and delicious, too. The recipe is a simple mix of eggs, flour, yogurt, oil, baking powder, and vanilla. He tells us to coat the blueberries in flour before adding them in, to keep them from sinking. Great to know!
This cake is a wonderful way to use the blueberries you may have picked earlier in the season and stored in your freezer. This recipe would also be terrific to make ahead, and then slice and freeze so that you can have a piece whenever you’d like, without the risk of eating all of this gorgeous loaf at once. If you’re going to have a house full of guests for the holidays, you could always make the loaf now, freeze it whole and then take it out to thaw just before serving. That way, it will appear as if you've been baking for days.
