This creative casserole looks like a dream dinner. We love spaghetti squash, but we get bored with making it sometimes. This fiber-filled meal starts by roasting spaghetti squash with olive oil and salt and pepper. Once cooked, scoop out and into a prepared baking dish. While the squash roasts; sweat down a blend of carrots, onions, and celery in a frying pan. Make the creamy sauce by blending hot sauce, Greek yogurt, ranch dressing, paprika, and garlic powder.
Add the cooked veggie mix and cooked shredded chicken to the sauce, and then layer the mixture over the shredded squash. Top it with shredded cheddar cheese, cover and bake at 400 degrees for about 25 minutes. Remove the covering and bake it for an additional 10 minutes. So easy and it looks so darn delicious!
