'Crockpot Italian Cheese Tortellini' Is a Weeknight Dinner Miracle

Sometimes our very best creations come out of necessity. This is true of this recipe for slow-cooker tortellini. TikTok content creator @tinaholbrookscott shares the recipe she created after a hurricane, on day 7 of a power outage. And we think she’s pretty darn creative under pressure. 

You don’t need a power outage to make this remarkable meal!

This looks absolutely delicious! This is such a clever idea! To the Crockpot, she adds 36 ounces of cheese tortellini, followed by 28 ounces of Italian diced tomatoes, an 8oz block of cream cheese, and 32 ounces of chicken broth. She tells us to season to taste, using salt, Italian seasoning, minced garlic, and onion powder. Then add 3 cups of shredded cheese, a handful of fresh spinach, and it’s ready to cook on high for two hours. We love how fast and easy this is!

This gorgeous meal looks better than some we’ve made with the power on. This recipe is ideal for busy weeknights. This is comfort food at its best, and it’s perfect to have on hand for those cold winter nights.
