Plant-Based 'Lemon Ricotta Pasta' Looks Too Good to Be True

This dreamy pasta dish is just what we needed today. This sensational meal can be made with plant-based or regular dairy ricotta. TikTok content creator @plantbasedschool shows us how to make one spectacular dish! 

This dish is vegan, and it’s every bit as creamy and delicious as the real cheese stuff!

This looks fabulous! In this simple recipe, he starts by cooking the pasta in salted water. Once the pasta has cooked for 6 minutes, add in the frozen peas and continue cooking until al dente, per the package directions. Reserve one cup of pasta cooking water. In a mixing bowl, combine ricotta cheese, lemon zest, parmesan cheese, olive oil, grated nutmeg, salt, and pepper. Add your drained cooked pasta/peas to the cheese sauce and use your reserved cooking water to thin the sauce as needed. A crusty piece of bread feels like a must for this meal. It looks so easy, and so much better than takeout!
