'Low-Carb Green Goddess Salad' Is the Answer to Our Prayers

Pasta salad isn’t one of those meals we typically think of as a low-carb food. However, the possibility of eating pasta salad on a keto diet has us pretty excited. TikTok content creator @ketorecipes shows us how to make a keto-friendly pasta salad, and it looks better than any carb-rich version we’ve seen!

This sensational salad uses Kaizen in place of the regular pasta. Kaizen is a low-carb pasta alternative that’s vegan, high in protein, gluten-free, and soy-free, too. That sounds like a great swap! The goodness of this salad only begins with the low-carb pasta. To the cooked pasta, he adds finely diced cabbage, cucumber, and chives. It looks so crunchy and flavorful! For the magnificent homemade dressing, he blends shallots, garlic, fresh basil, chives, walnuts, olive oil, rice vinegar, and nutritional yeast. Delicious! We absolutely love the addition of nutritional yeast in this dressing. This golden powder provides extra flavor and tons of nutritional value, including extra protein and B vitamins, too.

You can serve this versatile side dish with sandwiches for school lunches or with a grilled chicken breast, if you’d like to have additional protein and while still keeping it low-carb.
