These super easy mini pot pies make a terrific meal for those nights when you just want something easy but warm and satisfying, too. These are too cute to be this easy!
Ahh! We can't wait to make them. This simple recipe uses a 16.3 oz can of Pillsbury Grands Biscuits, 1 and a 1/2 cups of diced cooked chicken, 1 can of condensed cream of chicken soup, and one bag of cooked mixed vegetables. Start by greasing a muffin pan, then flatter each biscuit into a circle and place them inside the pan and gently press to cover the bottom and sides of each cup.
Then, combine the cooked vegetables, condensed soup, diced chicken, and mix well. Add the filling to the biscuits and bake at 375 degrees for 20-25 minutes. After baking, if desired, you can top them with cheese and bake for a few more minutes. We are loving everything about this recipe!

Viewers were ready to give it a shot as well. Commenter @Michelle Thompson said, “I have all the ingredients! I will try this tomorrow! Thank you!” And @Brian added, “Looks good, why do I want mashed potatoes on top of them though?” Mashed potatoes on top? Brilliant! We can’t wait to try this out, and the addition of mashed potatoes on top has us thinking, this could be a great way to use Thanksgiving leftovers, too. Mini pot pies for the win!
