Crockpot 'Creamy Southwest Chicken Chili' Is a Chilly Day Miracle

We're always looking for new ways to make an easy dinner. We love our Crockpot meals, especially when they turn out to be restaurant quality dishes. TikTok content creator @brooklynsbites shares her superb chili recipe with us, and we can’t wait to make it.

No one will believe this beautiful meal came from the Crockpot.

This looks unbelievably good! We could eat chili every day, and this southwest chicken version is no exception. This soup is packed with delicious flavors. In this effortless recipe, she starts by placing 3 chicken breasts on the bottom of the slow cooker. Over the chicken she throws in diced onions, diced pepper, black beans, corn, Rotel tomatoes, seasonings, a packet of ranch, and chicken stock. Stir this together and cook on low for 6 hours or on high for 4 hours. Remove about a cup of broth and stir in the cream cheese to melt before adding it back to the Crockpot. She tells us this helps to prevent curdling. After 4-6 hours, shred your chicken, stir it all up, and serve.

You can top this beautiful chicken chili with avocado, tortilla chips, sour cream, green onions, or anything else you’d like. We're so excited to give this a taste; it looks sensational!
