We love the idea of zucchini and eggs together! It reminds us of Frittatas at Sunday brunch with great friends and bottomless mimosas. The fact that you're also getting an extra serving of veggies is a bonus, and the list of zucchini taco fillings is endless. 

Seasoned ground beef or shredded chicken, BBQ pork or grilled shrimp would all make delightful meal choices. We are also thinking that using them quesadilla-style, with melty cheese, would make a fabulous low carb snack!
