I don’t have any issue with potatoes that have a few eyes growing - I just cut those out. But when a potato is so soft that it’s slimy and disintegrating, I’d consider that rotting. I have never seen a potato do that before, and I don’t know of any ways to fix a potato that’s gotten to that point. I’ve never had these issues with any other potatoes, just the ones from Misfits Market. And no, I didn’t grow up on a farm. But I know rotting produce when I see it.
