My Quest for an Easy Recipe for Chicken Salad Sandwiches
Way, way back when I first got married and I was still trying to impress my husband (grin), I wanted to learn how to make chicken salad sandwiches. I wanted a chicken salad sandwich recipe that was not just easy, but also delicious.
Over the years, I experimented to get my easy chicken salad recipe just right; I spent a lot of time and effort perfecting it. I hit on what I believe is the best recipe ever. It's not just basic but has a bit of finesse. It's right at home at a kids' lunch table or a bridal shower buffet. It can be simple or elegant.
I have served this chicken salad many times over the years, and I have never failed to receive compliments and requests for my recipe. When the internet came along, I realized that many cooks will use the internet, not a cookbook, when looking for recipes. So here it is. Try this easy chicken salad sandwich recipe.
(Serves about 6)
- 3 cooked chicken breasts, chopped
- 1 or 2 stalks celery, chopped (about 3/4 cup)
- 2 green onions, chopped
- 1/2 cup seedless grapes, halved
- 3/4 cup dried cranberries
- 3/4 cup salad dressing, such as Miracle Whip
- 2 tablespoons coleslaw dressing (Marzetti's is good)
- 1 teaspoon paprika
- 1 teaspoon seasoning salt
- Coarsely ground black pepper, to taste
- Simply mix everything together well.
- Chill for at least one hour before serving; it tastes much better if allowed to chill overnight.
Serve on toasted bread, croissants, or lettuce leaves. It also tastes great in pita pockets or hollowed tomato cups. Also try different breads such as ciabatta or raisin bread.
Chicken Salad Sandwich Recipe Comments
Grace on March 26, 2020:
I see lots of these comments are very old and everyone commented on the color. I just made it and I reduced the paprika to a 1/4 tsp because I only had smoked paprika and it still was delicious ......1st timer using grapes and cranberries in my chicken salad and it still delicious.
herb smith on September 09, 2017:

I just made this to take to Easter lunch with family tomorrow. I sampled it and even before it has chilled it already tastes yum-licious!! Can't wait to share with everyone, or maybe not; ) I had Helmann's on hand so just added a little extra cole slaw dressing to give some zing. Thanks for the recipe!

Awesomeness is the correct word to describe this recipe except do you fry the chicken or cook it
Anna on March 27, 2012:
i tried this recipe with some slivered almonds that i just threw in a pan instead of the cranberries to add some of a crunch, very tasty.
Crys' on January 08, 2012:
It's me again. I'm sorry but every time I make this recipe I whisper you a lil' THANK YOU.yummmmmmmyyyyyyyy it is. In addition to adding the green apples, I use a RED ONION for extra tastiness.......Wow! Thanks again. It tastes like a whole new sandwich each time I make it.

WOW,I made the chichen salad, it is so good, I'm suppose to take it to a Christmas party at my church, but I can't stop eating it...lol. thank FOR THE RECIPE.
Melissa Cole from Springfield, Tennessee on November 19, 2011:
Thank you for posting this. I was looking for something that I could take to a church "soup" social. I didn't want to bring a dessert like everyone else and wanted something that would pair well with different kinds of Soup. I think I am going to do them in croissants and the hollowed tomato cups just to add variety.
Crys' on November 13, 2011:
I had been searching for a simple yet delicious chicken salad recipe.......needless to say my search is ovah! This was awesome, my whole family LOVED it. Okay, finally taking the time to comment. Three summers ago I started making this recipe. It is outstanding and needs no adjustments. Not everything has to be spicy! :) Thanks for an outstanding recipe and for sticking with it til you got it right!

Jazma Jo Baker on January 25, 2011:
This recipe looks great, I'm taking the advice of the comments and leaving out the paprika and cranberries as i think it'd ruin it for me.
I'm cooking this tomorrow in my food and nutrition class, I'm having to use Quorn style chicken as I'm on my veggie year...hope the effect will still be the same!! :s xoxoxo
kenzilynn on January 16, 2011:
Sounds good but mine is better
you use chicken, a little mayo and red hot spicy and good
nunya on December 03, 2010:
miguel if you use mayo it wont come out sweet...mircle whip and other salad dressing brands have more sugar added to them
Miguel on November 19, 2010:
I'm going to go against everybody here and say I didn't like it. It was way too sweet for what I would consider a normal chicken salad. Chicken salad should be mostly savory not sweet.
April on November 11, 2010:
Wow. Made this for the first time & this is the BEST chicken salad I've ever had! Thanks so much for sharing. This will be a permanent recipe for our family!
Denvergirl on November 01, 2010:
I think it's good - however the paprika turned the salad to an orange color which didn't seem very appetizing to me.
Idahowoman on September 17, 2010:
This recipe rescued my old dull chicken salad - thanks for sharing.
Kesha on September 08, 2010:

This is by far the best chicken salad recipe I've ever tried! Next time I'm going to use paprika and1/2 tsp regular salt. Paprika and seasoned salt turn it alittle too orange. Great flavor!
Melanie Patterson on August 17, 2010:
I always add 1 tsp of curry powder. It is a favorite at all my parties!
Pam on August 07, 2010:
How much does this make , if you measured the whole amount? or how much is a serving size? It says 3 breasts , how many ounces of meat is that?
Tashia on August 02, 2010:
Oh my goodness, This was amazing!
Teri on July 15, 2010:
Yum! I didn't have paprika, so I substituted dill weed instead... could also put parsley in it too!
danay on July 02, 2010:
I made this and it taste so much better if you add sugar; )
Judy in Tex on June 18, 2010:
I have been making this for years and for those of you who are not using the cranberries are missing out. I don't like cranberries but they really add to chicken salad. I also add chopped pecans. I made it for an open house and knew that people would ask for the recipe. I made them up in advance and gave them to people who ask. Try the cranberries!!!!
Jess on May 29, 2010:
I made this about a year ago (we loved it!) and just sat down to peruse the internet and hopefully find it again.. and here I did! It was a hit then and my husband and I are excited to try it again. It is getting bookmarked this time for sure. ;)

Robin on April 17, 2010:
I made this recipe for my daughter's baby shower in February & it was so good. I got so many compliments & requests for the recipe. The only thing I did different was to leave out the paprika. When I made a test recipe it was very orange & the flavor was strong. In my opinion the recipe is better without it. Thank you so much for sharing your AMAZING Chicken Salad recipe.
Wendy on March 26, 2010:
going to make it for a bridal shower tomarrow

is it suppose to come out orange? the only seasoning salt that i could find was orange....it tasted good, but had a little spicy kick to it...is that the way it is suppose to be?

I tried you recipe on toasted panini bread.Awesome!
Angela Harris (author) from Around the USA on March 14, 2008:
Sorry I missed your comments, Princessa Kat07 and debby28.
Princessa, you can use mayonnaise instead of salad dressing. And yes, you can skip the cranberries. Add raisins if you wish.
Kat07, if your husband doesn't like cranberries or raisins, just leave them out. Chopped apples would be good, but not necessary.
debby28 from WASHINGTON on February 25, 2008:
Sounds really great going to try it.
Kat07 from Tampa on January 11, 2008:
This sounds like a fantastic recipe! I want to make it for my husband, but he won't eat the cranberries or any kind of raisin substitute. Any suggestions?
Wendy Iturrizaga from France on December 03, 2007:
It sounds delicious... and just looking at the picture made me hungry... not good for the pre-Christmas diet! But then, good things deserve special treatment no?
Can I use any salad dressing? and forget about the cranberries? I think we do not have them over here.
Angela Harris (author) from Around the USA on December 03, 2007:
Thanks, monoharv and sukritha for the comments.
Zsuzsy Bee, I'm so glad that you liked my chicken salad recipe. Actually, I plan on making some today. I really like recipes like this for the holiday season. I can just make some chicken salad, put it in the refrigerator, and everyone can eat whenever they get hungry.
Joyeuse, thanks for the tip! I never would have thought to add jalapeno to chicken salad. Since I love jalapenos, I'll have to give this a try.
sukritha from Cochin on November 28, 2007:
Tastey Tastey I need it. Great delitious Hub
Joyeuse on November 27, 2007:
Something I've found that's surprised me: chopped, de-seeded, de-membraned jalapenos go very well with chicken salad, especially one with green onions. The de-seeding and -membraning gets rid of the heat, and the jalapeno complements the other flavors.
Tasty hub! :P
Zsuzsy Bee from Ontario/Canada on November 26, 2007:
Angela! I had a couple of friends over for a late lunch today and made your chicken salad. It was a great success. I have enough left for supper, yum. Thanks for a great recipe.
Zsuzsy Bee from Ontario/Canada on November 25, 2007:
Grapes and cranberries in the salad, how great is that. I'm game. Tomorrow for supper. I'll let you know how it goes.
Thanks for the recipe
