Cooking With Duck Eggs

Duck eggs are generally slightly bigger than hen eggs and most often a pale blue in colour. They can be used in virtually every recipe created for chicken eggs in exactly the same way and are particularly good for baking cakes due to their larger yolks and subsequent richer qualities. Also like chicken eggs, however, they are delicious when cooked in a variety of different ways and served on a sandwich with a wide potential variety of accompaniments. This page is devoted to looking at 10 different sandwich recipes using duck eggs.

When cooking a duck egg by frying, poaching or any similar method, it is a good idea to begin by breaking the egg or eggs in to a small cup or bowl. This makes it much easier to pour the egg in to the frying pan or saucepan and also affords the opportunity to remove any errant pieces of shell which may inadvertently have been released in to the egg when it was broken in the simplest of fashions and prior to the egg starting cooking. Where the specific recipe calls for it, the egg can also be seasoned in this vessel before being poured in to the cooking pan.

1. Fried Duck Egg and Fried Potatoes Roll

Ingredients

  • 2 small starchy/floury potatoes, about 2 inch by 1 inch by 1 inch
  • Salt and black pepper
  • Vegetable or sunflower oil for frying
  • 1 fresh duck egg
  • 1 soft bread roll

Instructions

  1. Wash but don't peel the potatoes and slice across the way in to ¼-inch thick discs. Season lightly on both sides with salt and pepper.
  2. Pour some oil in to a large frying pan and bring up to a medium heat. Fry the potatoes for 15 to 20 minutes, turning half way through cooking.
  3. Remove the potatoes to a plate covered with kitchen paper to drain and carefully wipe away any excess oil from the frying pan. Bring it back up to heat before pouring in the lightly seasoned duck egg. Once the duck egg is clearly holding its shape and starting to cook, reduce the heat to low to medium and fry for 3 minutes each side.
  4. Cut the bread roll open and arrange the potato slices slightly overlapping on the bottom half.
  5. Lift the fried egg on to the potatoes with a spatula and close the roll over to serve.

2. Smoked Trout Duck Egg Omelette Sandwich

Ingredients

  • 1 duck egg
  • 2 teaspoons hot smoked trout flakes
  • Black pepper
  • Vegetable oil for frying
  • 2 slices bread

Instructions

  1. Break the egg in to a suitable dish and beat lightly with a fork until combined. Add the smoked trout and a little black pepper. (As the trout should have been salt cured prior to being smoked, there is no need for further salt.)
  2. Pour a little oil in to a nonstick frying pan and bring it up to a medium to high heat.
  3. Give the egg and trout combination a gentle but thorough stir before pouring in to the centre of the frying pan. Working quickly with a spatula, draw the sides in to try and create and maintain a rectangular shape approximately the size of a slice of bread. Reduce the heat after 30 seconds.
  4. After 2 minutes on first side, carefully turn with spatula to fry for 2 minutes on second side.
  5. Lift omelette on to a slice of bread and top with the second slice before pressing down lightly and slicing in half to serve.

3. Smoked Trout and Poached Duck Egg Roll

Ingredients

  • 1 duck egg
  • 2 tablespoons vinegar*
  • 2 tablespoons flaked hot smoked trout
  • 1 soft bread roll
  • Salt
  • Pinch dried dill

*You can use virtually any kind of vinegar but one such as white wine vinegar will have a less pungent smell when it heats than such as cider or malt vinegar.

Instructions

  1. Half fill a large pot with about four inches of cold water and stir in the vinegar. Note that it is imperative not to add salt at this stage as it will prevent the albumen of the egg from setting properly. Put the pot on to a high heat just until it starts to simmer.
  2. Stir the water in the pot as it starts to simmer with a spoon to form a whirlpool in the centre in to which you should carefully and smoothly pour the duck egg from a height just above the surface of the water.
  3. Reduce the heat under the pot to maintain the gentlest simmer possible and cook for 5 minutes. You want the yolk to be fairly well set when putting it on a sandwich but with just a touch of liquid in the very centre.
  4. Lift the egg from the water with a slotted spoon and leave to steam off, dry out and cool slightly for 2 to 3 minutes, to avoid burning the inside of your mouth.
  5. Cut the bread roll open and arrange the trout flakes on the bottom half before adding the egg, scattering with a little salt and dried dill and closing over gently to serve.

4. Fried Duck Egg, Sausage and Onion Roll

  • 2 good quality beef sausages
  • Vegetable oil for frying
  • 2 slices from ½ white onion, separated in to strands
  • 1 duck egg
  • Salt and pepper
  • 1 soft bread roll

Instructions

  1. Pour a little vegetable oil in to a fairly large, nonstick pan and bring it up to a medium heat. Do not prick the sausages with a fork before adding them to the pan. This ultimately serves only to let the juices run out in to the pan and make the sausages dry and tasteless. If they are good enough quality sausages and are cooked gently enough, they should not burst.
  2. Add the sausages to the heated pan and fry on a low to medium heat for 20 minutes, turning frequently.
  3. Add the onions to the pan and stir around briefly with the sausages before turning up the heat in the pan and, moving the sausages and onions to one side, pouring the seasoned duck egg in to the pan. When its shape is holding, reduce the heat again to low to medium and fry for 3 minutes.
  4. Turn the duck egg to fry for 3 minutes on the second side and lift the sausages and onion strands to a holding plate with a spatula to let them steam off and cool slightly.
  5. Cut the bread roll open and sit the sausages on the bottom half, followed by the onion strands and the duck egg straight from the pan. Close the roll over to serve.

  • 1 duck egg
  • 1 teaspoon butter
  • 1 large garlic clove, peeled and grated
  • Salt and pepper
  • 1 teaspoon freshly chopped flat leaf parsley
  • 2 slices bread

Instructions

  1. Put the egg in to a pot of cold water with enough water to ensure it is comfortably covered.
  2. Put the pot on to a high heat until the water starts to boil then reduce the heat to achieve a gentle simmer for 6 minutes.
  3. Take the pot to your sink and run cold water in it for about 2 minutes. Lift the egg out of the water and gently crack the shell by tapping it around the outside of the pot. Peel away and discard the shell.
  4. Put the egg in to a mixing bowl and roughly chop with a knife. Add the butter, garlic, salt and pepper before mashing with the back of a fork.
  5. Add the parsley to the egg combination and stir through before spreading on a slice of bread. Top with second slice of bread, press down lightly and cut in half to serve.

  • 1 tablespoon shredded white cabbage
  • 1 tablespoon thinly sliced white onion
  • Vegetable oil for frying
  • Salt and black pepper
  • 1 duck egg
  • 2 slices bread

Instructions

  1. Pour a little oil in to a nonstick frying pan and bring it up to a medium heat.
  2. Add the cabbage and onion to the pan, season with a little salt and pepper and stir fry over a medium heat for 2 or 3 minutes to soften. Draw back towards the centre of the pan and increase the heat slightly.
  3. Beat the egg until just combined before pouring over the cabbage and onion. Use a spatula to shape the cooking egg to roughly the size and shape of a slice of bread.
  4. After 2 minutes, carefully flip the omelette over to cook for 2 minutes on the second side.
  5. Lift the omelette on to 1 slice of bread before topping with the second slice, pressing down lightly and slicing in half to serve.

  • ½ thick circular slice from peeled chioggia or similar beetroot, about 3 inches in diameter
  • Salt and black pepper
  • Vegetable oil for frying
  • 1 duck egg
  • 1 soft bread roll

  1. Pour a little oil in to a nonstick frying pan and bring it up to a medium heat.
  2. Season the sliced beetroot on both sides with a little salt and pepper before laying in the heated pan to fry for 10 minutes each side.
  3. Lift the fried beetroot slice from the pan to a holding plate.
  4. Carefully wipe any excess oil from the hot pan with some kitchen paper before lightly seasoning the duck egg and pouring in to the still hot pan. Fry for 3 minutes each side.
  5. Cut the bread roll open and lay the fried beetroot on the base. Top it with the fried duck egg and close over to serve.

Ingredients

  • 2 rashers unsmoked English back bacon (use 4 strips American bacon)
  • Vegetable oil for frying
  • 2 duck eggs
  • 1 teaspoon butter
  • Salt and white pepper
  • 2 slices bread

Instructions

  1. Pour a little oil in to a frying pan or skillet and fry the bacon over a medium heat for 2 to 3 mainutes each side or until done as you like it.
  2. Just before bacon is ready, add duck eggs and butter to a saucepan. Very important: do not season at this stage!
  3. Put the heat on under the saucepan, lift the bacon from the frying pan and lay on a slice of bread.
  4. Start stirring the eggs with a wooden spoon and keep doing so as they start to cook. Occasionally, lift the pan off the heat for a few seconds but keep stirring, to stop the eggs overcooking.
  5. As soon as the eggs are fully cooked (no obvious liquid remains), remove from the heat. Season at this stage with a little salt and white pepper before giving a quick final stir and spooning on to the bacon.
  6. Add the second slice of bread. Slice in half to serve.

  • ¼ pound pork leg steak

  1. Pour a little oil in to a nonstick frying pan and bring up to a medium heat.
  2. Season the pork steak on both sides with a little salt and pepper and fry on a medium heat for 7 to 8 minutes each side until done.
  3. Remove pork steak to a holding plate, cover with foil and allow to rest for 10 minutes.
  4. 5 minutes after pork comes out of pan, wipe excess oil from pan and bring back up to medium heat before pouring in lightly seasoned duck egg. Fry for 3 minutes each side.
  5. Cut bread roll open and lay pork steak on bottom half. Lift duck egg on top and close over to serve.
