Fried potatoes almost certainly come in to the category of comfort food. While the description covers a multitude of possibilities—including both deep- and shallow-fried potatoes—the description in this instance refers to potatoes that have been sliced moderately thinly into discs before being shallow-fried in oil. While these fried potatoes are every bit as simple a creation as they sound, it is possible to season them in endless different ways, match them with an infinite number of potential accompaniments and even serve them on different types of bread to make imaginative and delicious sandwiches that need never be repetitive or boring.

Fried potato sandwiches were a great favourite with a family member of mine when I was a child, Peggy, so I suppose that's why the idea stuck. I very much enjoy experimenting with the concept. Living alone, sandwiches are always tempting and convenient but I keep them to a minimum when I can. Thanks for reading.

Thank you very much, Liz. Yes, lockdown has definitely had the effect of seeing me in my kitchen much more than I have been for quite a while. Although I hate the concept as a whole, it has got me enjoying cooking again.
