Fried potatoes almost certainly come in to the category of comfort food. While the description covers a multitude of possibilities—including both deep- and shallow-fried potatoes—the description in this instance refers to potatoes that have been sliced moderately thinly into discs before being shallow-fried in oil. While these fried potatoes are every bit as simple a creation as they sound, it is possible to season them in endless different ways, match them with an infinite number of potential accompaniments and even serve them on different types of bread to make imaginative and delicious sandwiches that need never be repetitive or boring.

How to Make Perfect Fried Potatoes: Basic Recipe

This is the cooking method employed in all of the recipes which follow. Seasonings sometimes vary and are detailed where applicable within the individual recipes.

Ingredients

  • Baking potato(es), as required (always use floury/starchy potatoes, never waxy)
  • Vegetable oil for frying
  • Salt and pepper

Instructions

  1. Wash the potato and dry with kitchen paper but don't peel (unless the skin is particularly badly damaged).
  2. Pour enough vegetable oil into a non-stick frying pan to comfortably cover the base and put it on to reach a medium heat.
  3. Slice the potato to a thickness of around a quarter of an inch or slightly less. Season each slice on both sides with salt and pepper.
  4. Lay the potato slices in the heated frying pan and fry on a low to medium heat for 7 or 8 minutes each side.
  5. Lift the potatoes to a plate covered with kitchen paper to drain before starting to assemble the relevant sandwich.

Ingredients

  • 2 whole chicken thighs (skin on)
  • ¼ red bell pepper
  • ¼ orange bell pepper
  • ¼ yellow bell pepper
  • Salt and pepper
  • Smoked paprika
  • 8 fried potato slices (see basic recipe above)
  • Vegetable oil for frying
  • 2 soft bread rolls

Instructions

  1. Put your oven to preheat to 400F/200C/Gas Mark 6.
  2. Season the chicken thighs on their flesh side with salt, pepper and paprika before laying them skin sides up in a suitable casserole dish.
  3. Seed and moderately finely slice the bell pepper halves before laying on top of the chicken thighs, placing the lid on the dish and cooking in the heated oven for 35 minutes.
  4. When the thighs are ready, take them from the oven and pierce with a skewer to ensure the juices run clear. Re-cover and set aside to rest while you fry the potatoes, seasoned with salt, pepper and paprika.
  5. Peel the skin from the rested chicken thighs and pluck the flesh off in chunks.
  6. Cut the rolls open and divide the fried potatoes between the two bottom halves before topping with the chicken meat and bell peppers. Place the tops on the rolls to serve.

  • 6 slices fried potato (see basic recipe above)
  • Vegetable oil
  • Salt and pepper
  • ¼ red bell pepper
  • ¼ orange bell pepper
  • ¼ yellow bell pepper
  • 2 slices from half white onion
  • Chinese 5 Spice
  • 2 slices white bread

Instructions

  1. Fry the potatoes (seasoned with salt, pepper and Chinese 5 Spice) while you seed and moderately finely slice the bell peppers and slice the onion, separating each slice into strands.
  2. Take the potatoes from the frying pan and place on a plate before turning up the heat to maximum and stir-frying the peppers and onion—seasoned with salt, pepper and a good shake of Chinese 5 Spice—for a couple of minutes.
  3. Arrange the potatoes on one slice of bread before topping with the peppers and onion and laying the second slice of bread in place. Slice in half to serve.

  • 6 slices fried potato (see basic recipe above)
  • Vegetable oil
  • Salt and pepper
  • Boil in the bag kipper fillet
  • 2 slices white bread

Instructions

  1. Follow the instructions on the pack for cooking the kipper fillet. In this instance, it required to be simmered for 20 minutes.
  2. Start frying the potatoes at the time where they should be ready just after the kipper is done.
  3. Remove the kipper fillet carefully from the cooking bag to a small, deep plate.
  4. Arrange the cooked potatoes on one slice of the bread before breaking the kipper fillet into chunks and laying on top.
  5. Top with the second slice of bread and cut to serve.

Ingredients

  • 1 (8-ounce) can chopped tomatoes in tomato juice
  • 2 large garlic cloves
  • 1 large dried red chilli
  • Salt and pepper
  • Vegetable oil
  • 2 pork link sausages
  • 6 slices fried potato (see basic recipe above)

NB - This recipe will produce more tomato sauce than is required but it can be cooled and refrigerated in a suitable container for up to three days.

Instructions

  1. Pour 2 or 3 tablespoons of oil into a small saucepan and gently heat. Add the peeled and roughly chopped garlic clove and saute for a couple of minutes before adding the tomatoes, chopped chilli and salt and pepper. Bring to a simmer for as long as it takes to cook the sausages and potatoes, stirring occasionally.
  2. Start the sausages cooking first in the frying pan as they will take around 20 minutes. Add the potatoes after 5 minutes or so.
  3. Lay the potatoes on one slice of the bread. Lift the sausages to a chopping board and cut in half lengthways before laying cut sides down on top of the potatoes.
  4. Spoon some tomato sauce on top of the sausages before laying the second slice of bread in place and cutting in half to serve.

Ingredients

  • 6 slices fried potato (see basic recipe above)
  • Salt and pepper
  • Vegetable oil
  • 2 large eggs
  • 6 slices white bread
  • Tomato ketchup (optional)

Instructions

  1. Season the potato discs with salt and pepper and fry as normal in a small pan, just big enough to contain them and no more.
  2. When the potatoes are fried, put your kitchen grill/broiler on to preheat to its highest setting.
  3. Beat the eggs in a small bowl until just combined and season with a little more salt and pepper.
  4. Pour the eggs over the potatoes, slowly and evenly.
  5. Cook on the stovetop for a couple of minutes until you can see the egg is almost set, then place the pan under your grill/broiler for another minute or so until the eggs are completely set.
  6. Use a plastic spatula to divide the omelette into three equal portions and lay each piece on a slice of bread. Add some ketchup if desired and top each assembly with a second slice of bread.

Ingredients

  • 6 to 8 slices fried potato (see basic recipe above)
  • Salt and pepper
  • Hot chilli powder
  • Vegetable oil
  • 4 medium lettuce leaves
  • 2 slices from peeled and halved red onion
  • 4 strips bacon (use smoked streaky bacon, UK)
  • 1 small to medium tomato
  • 1 tablespoon freshly chopped coriander leaf/cilantro

Instructions

  1. Season the potatoes before frying with a little chilli powder, as well as with salt and pepper.
  2. Wash the lettuce leaves, roll and shred. Add to a bowl with the onion slices, separated into strands. Season with a little salt and pepper and combine by tossing with your hand.
  3. When the potatoes are just over halfway cooked, start to fry the bacon in a separate frying pan with a little oil over medium heat until done as you like it.
  4. Cut the rolls in half and lay 3 or 4 potato discs on the base of each, topping with half the lettuce and onion combination.
  5. Drain the bacon on a plate covered with kitchen paper before arranging on top of the lettuce.
  6. Wash and dry the tomato before slicing and arranging 3 slices on each roll.
  7. Scatter with the chopped herb and place the roll tops in place to serve.

  • 6 (1-inch) squares of sliced goat cheese
  • 3 pitted black olives
  • 3 pitted green olives
  • 2 slices white bread

Instructions

  1. Start the potatoes frying as normal but 5 minutes before they are due to be ready, place a goats cheese square on each piece that it may partially melt.
  2. Cut the olives in half, from top to bottom.
  3. Lay the potato and goats cheese slices slightly overlapping on one slice of bread.
  4. Arrange the olives at regular intervals over the cheesy potatoes, top with the second slice of bread and cut in half to serve.

Ingredients

  • 6 slices fried potato (see basic recipe above)
  • Salt and pepper
  • Vegetable oil
  • Generous handful baby leaf spinach
  • 3 tablespoons natural yoghurt
  • 1 tablespoon tomato ketchup
  • ½ teaspoon hot chilli powder
  • 2 slices wholewheat bread

Instructions

  1. When the potatoes are on to fry, bring a small saucepan of salted water to a rolling boil and add the spinach. Simmer for 1 minute only before draining and allowing to cool.
  2. Combine the yoghurt, tomato ketchup, chilli and a little salt and pepper in a small glass mixing bowl.
  3. When the spinach is cooled (it should cool very quickly), squeeze out the excess water at your sink and finely chop it before stirring it through the chilli sauce.
  4. Arrange the potatoes on one slice of bread and spoon on some chilli and spinach sauce (the rest can be covered with clingfilm and refrigerated for 2 or 3 days).
  5. Place the second slice of bread on top and slice to serve.

Ingredients

  • 12 slices fried potato (see basic recipe above)
  • Salt and pepper
  • Vegetable oil
  • ¼ small white onion
  • 1 garlic clove
  • ½ teaspoon hot chilli powder
  • 2 tablespoons canned red chilli beans
  • 6 green string beans
  • 4 slices white bread

Instructions

  1. When the potatoes are halfway through cooking, pour about 2 tablespoons of vegetable oil into a saucepan and bring it up to medium heat. Slice the peeled onion quarter and add it to the oil, along with the peeled and grated garlic clove and the chilli pepper. Saute for an initial 2 or 3 minutes to soften the onion strands.
  2. Wash the green beans and cut in half lengthways. Add them to the saucepan along with the kidney beans and saute for another 2 or 3 minutes.
  3. Arrange the potato slices on two of the slices of bread and top with the spicy beans followed by a second slice of bread.

Ingredients

  • 8 sticks tenderstem broccoli
  • 1 large red chilli
  • 2 garlic cloves
  • Vegetable oil
  • 1 (8-ounce) can chopped tomatoes in tomato juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper
  • 12 slices fried potato (see basic recipe above)
  • 4 soft bread rolls

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add the broccoli and simmer for 2 or 3 minutes before draining and setting aside to steam off, dry out and cool down.
  2. Pour enough vegetable oil into a pot to comfortably cover the base and bring it up to medium heat. Slice the red chilli and peel and slice the garlic cloves. Add to the pot and saute for a couple of minutes.
  3. Pour the tomatoes into the pot and add the mustard with some salt and pepper. Stir well and bring to a gentle simmer, stirring occasionally, while you fry the potatoes.
  4. Five minutes before the potatoes are due to be ready, roughly chop the broccoli stems and add to the tomato sauce, carefully stirring them through.
  5. Cut the bread rolls in half and arrange three potato slices on the base of each. Carefully spoon on the spiced broccoli and close the rolls over to serve.

Fried potato sandwiches were a great favourite with a family member of mine when I was a child, Peggy, so I suppose that's why the idea stuck. I very much enjoy experimenting with the concept.
