This dip is full of fresh flavor without a lot of work. It's an alternative to guacamole and can sub as a topper, like sour cream or salsa, for Mexican food recipes. It's also great by itself with tortilla chips and provides a cooling accompaniment for my hotter-than-hell salsa. It is super easy to make and adds a great flare to an appetizer spread. This can also be used as a topper of a variety of meats, veggies, and pasta.
