  • Avocados have more potassium than bananas: 760 mg per 5 oz.
  • Avocados are a decent source of protein: 3 grams per 1 cup.
  • Avocados are a rich source of fiber: 10 grams per 1 cup
  • Avocados are cholesterol-free with a residual amount of sodium.
  • Avocados have monounsaturated fats, which are known to help lower bad cholesterol levels.
Avocado, Almond and Feta Cheese Salad

Avocado, Almond and Feta Cheese Salad

1. Avocado and Almond Salad

This is an easy recipe—simply combine all of the ingredients and lightly stir them together and serve chilled in a salad bowl. Also, this serves as a great filler for pita pockets, or as a topper for flatbread.

Ingredients

  • 1 medium avocado, chopped
  • 4 small sprigs cilantro, chopped
  • 1 medium roma tomato, chopped
  • 1/4 cup onion (white or red), finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup raw almonds, whole, shelled
  • balsamic vinegar, drizzle to taste
  • fresh lime juice, optional
  • olive oil, optional (just a drizzle)
  • course ground pepper, optional

2. Baby Spinach and Avocado Salad

Healthy fact: Did you know the iron in spinach is more easily absorbed by the body when it is consumed with citrus?

Ingredients

  • 4 cups loosely packed baby spinach
  • 1 large orange, peeled, seeded and chopped into bite-size pieces
  • 1 large avocado, halved and sliced
  • 4 large strawberries, sliced
  • 1/4 cup almonds, shelled and natural
  • 1/3 cup feta cheese
  • Divide all the ingredients equally into two portions. Serves 2.

Preparation

  • Divide the spinach in half and lay evenly across two chilled dinner plates.
  • Evenly spread the orange bits over the spinach.
  • Next, add a layer of the feta cheese.
  • Sprinkle the top with almonds.
  • Garnish with slices of avocado and strawberries.
  • Enjoy with your favorite dressing. Suggestions: Honey mustard compliments the flavors of avocado and spinach. A drizzle of Balsamic Vinegar is my personal favorite.

3. Avocado and Mango Salsa

This mango and avocado salsa is a great topping over grilled chicken. Mix all of the below ingredients together in a bowl and chill until ready to serve.

Ingredients

  • 2 cups fresh or frozen mango chunks
  • 1 large avocado, chopped
  • 1/2 a cup of cilantro, chopped
  • 1/2 a cup white onion, chopped
  • 1/4 tsp chili powder
  • 1/4 tsp garlic powder
  • the juice of one lime

4. Guaca Salsa, Avocado Salsa

With this delightful recipe, place all of the ingredients in a blender and blend until smooth. Serve in salsa bowls.

Ingredients

  • 1 large avocado, peeled and pitted
  • 1 handful of cilantro, about 1 cup loosely packed
  • 1 cup of water
  • Juice of one lime
  • 1 chile serrano (optional)
  • a dash of salt, season to taste
  • Additional options: a clove of garlic and/or half of a white onion, chopped.
Avocado Ranch Dressing is a nice change from traditional ranch dressing. All you need is one large avocado, 1 cup of cilantro, 1/2 a cup of ranch dressing, 1 cup of water and a blender. Serve as a salad dressing or as a dip for your appetizers.

5. Avocado Ranch Dressing

Serve this easy recipe chilled as a salad dressing or as an appetizer dip. For preparation, simply add all of the ingredients into the blender and blend until smooth.

Ingredients

  • I large avocado
  • 1 cup loosely packed cilantro, chopped
  • 1/2 a cup pre-made ranch dressing
  • 1 cup of water
  • Optional: 1/4 cup onion and/or 1/4 cup crumbled bacon bits and/or 1/4 cup jalapeno slices (in vinegar)

6. Simple Guacamole

This simple recipe is perfect as a layer in tostadas or chalupas. Simply chop the avocado and mash all of the ingredients together. Serve with chips or with appetizers.

Mix all of the ingredients together and mash to desired consistency.

  • 1 small handful of cilantro, chopped
  • 1 chile serrano, chopped (optional). You may substitute with jalapeño.
  • Juice of one lime
  • A dash of salt
  • A dash of garlic powder

Hi missolive, What a yummy collection of recipe's using one of my favorite foods - avocado. Did you know avocado's are also very rich in healthy fats - my Doc. recommended I eat more of them to raise the healthy fat number in my blood.

I am living in Florida now, and other thanwhat I can get from a neighbors tree, the Avocados I get at the supermarkets are nothing like the ones we had available when we spent the winter in southern California in our RV. Anyway, very good hub.
