A Decadent Dip Perfect for Cold Winter Nights

There is nothing better than a traditional guacamole dip for those summer parties out in the sun, but as the days get shorter and the nights grow colder, sometimes we're looking for richer dips to help us keep warm.

Well, good news! With this goat cheese and habanero dip, you don't have to totally abandon your love of guacamole. This familiar tasting dish has all of the classic flavors of guacamole, but with a more decadent depth and fantastic heat.

The acid from the grape tomatoes and lime, heat from the habanero pepper, and smokiness from the cumin and cilantro provide an excellent counterbalance to the creamy avocado and goat cheese.

Ingredients

  • 4 large avocados, fruit scraped out
  • 2 medium limes, juiced
  • 2 medium habanero peppers, seeded and chopped
  • 1/2 cup grape tomatoes, quartered
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup goat cheese, crumbled
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon Himalayan pink salt

Instructions

  1. Remove the fruit from four avocados and place it in a large mixing bowl. Using a silicone spatula, pulverize the avocado until the mixture is largely broken down, but still thick and chunky.
  2. Add the juice from two limes to the mixture, being sure to remove any seed fragments that may fall into the juice during this process. Add the salt, pepper, and cumin, and thoroughly fold them in.
  3. Finely chop and seed two medium habanero peppers of any color and fold them into the mixture.
  4. Add 1/4 cup of freshly chopped cilantro and 1/2 cup of quartered grape tomatoes (use a very sharp knife and be careful when quartering these tiny tomatoes) to the mixture and fold them in. Leave a generous pinch of cilantro to the side before adding the herb to the mixture.
  5. Add 1/2 cup of crumbled goat cheese to the mixture and very gently fold them in, being sure not to overwork the mixture and accidentally liquefy the goat cheese.
  6. Spoon the guacamole mixture into a serving bowl, and add a generous pinch of cilantro to the top. Serve with warm tortilla chips.
