Ingredients

  • 2 cups spinach (palak), chopped
  • 1/2 cup fresh peas
  • 1/2 cup carrot, chopped lengthwise
  • 1/2 cup tomato, chopped
  • 1/2 inch ginger
  • 3 cloves garlic
  • 1/2 tsp peppercorns
  • 1 tsp butter
  • 1/2 tsp Italian seasoning, oregano, basil, etc.
  • 1 tsp cornstarch, dissolved in 1/2 cup of cold water
  • salt, to taste
  • 3 cups water

Instructions

  1. Collect, wash, and prepare all the ingredients. Make a paste of garlic, ginger and pepper. You can add water while grinding to thin, if needed. Mix the cornstarch with water, and set aside.
  2. Heat butter in a pan. Saute the chopped spinach until it is tender. Throw in the green peas and chopped carrots. Continue sauteeing over a low flame for 2 minutes. Add chopped tomato and ginger-garlic-pepper paste. Stir-fry for 2 minutes.
  3. Add 2-3 glasses of water and salt, to taste. Bring to a boil and slowly pour in the cornstarch mix. Let the contents boil for two more minutes, then turn off the heat and add the Italian seasonings. Mix well and enjoy!
