Green and Nutritious Spinach Soup With Cream

Spinach makes for a very tasty puree soup when combined with cream and spices. This homemade, simple soup is the perfect appetizer for cold winter evenings.

Spinach is an excellent source of vitamins A, B, C, and K—as well as calcium, magnesium, folate, and potassium. It is also a very good source of dietary fiber, zinc, and protein.

Ingredients

  • 2 packed bowls spinach, washed
  • 1 tsp butter
  • 2 tsp plain flour (maida)
  • 2 tsp olive oil (or any other oil)
  • 2 cups milk
  • 1/3 tsp pepper powder, or to taste
  • Salt to taste

Instructions

  1. Finely chop 8 spinach leaves while you heat butter in a deep-bottomed pan.
  2. Sauté the spinach in butter until it becomes crispy. Collect it in a bowl and set it aside. This is for garnishing the soup.
  3. Add the remaining spinach to the pan along with some salt. Stir-cook for 4–5 minutes then turn off the heat.
  4. Transfer the cooked spinach into a mixer or blender. Blend it until it becomes a smooth paste or puree then set it aside.
  5. Wash and dry your pan then add some oil. Throw in the plain flour and sauté on low heat for 2–3 minutes.
  6. Add the milk. Combine the roasted flour with it by stirring continuously. Bring the mix to a boil then turn it down to a simmer for 1 minute.
  7. Add the spinach puree and throw in some pepper powder. Add water to adjust the consistency. This soup should be moderately thick.
  8. Add some salt if desired. Boil the mix for 2–3 minutes then turn off the heat. Your favorite cream of spinach soup is ready!
  9. Pour equal amounts into 4 bowls. Garnish with the crispy spinach you prepared at the beginning of the recipe. Enjoy!
