10-Minute Garlicky Lemon Rice Soup
Make Your Own Healthy and Delicious Soup in a Jiffy
I like to add lemon to my food as often as I can. It is not only flavorful and tasty, it's also nutritious. Lemon-based foods have a sharp taste and a fresh flavor. They are good appetizers.
Lemons are healthy because they are full of things your body needs like vitamin A, vitamin B 6, vitamin C, vitamin E, folate, niacin, calcium, pantothenic acid, copper, protein, iron, etc.
This fruit has cancer-fighting ability and antioxidants. It helps to prevent constipation, diabetes, fever, indigestion, and high blood pressure. It aids to improve skin, hair, and teeth health.
Lemon has awesome sharp-sour taste. It refreshes your mouth. Lemony foods are good appetizers.
Lemon and rice soup is very easy and quick to make. This is my own recipe that straight away provides you the health benefits of lemon and garlic. This clear puree is a winter winner.

- 1 small cup Rice, freshly cooked rice or left over rice
- 1/2 tsp pepper corns
- 4 garlic cloves, sliced
- 1 lemon, or two tbsp lemon juice
- 4 curry leaves
- 1 tbsp chopped fresh coriander leaves
- 1/4 tsp salt, or as per taste
- 1/4 tsp butter or oil or ghee, for frying garlic
Step-By-Step Instructions and Images for Making Garlicky Lemon and Rice Soup
- Put cooked rice, pepper corns, and a cup of water to a mixer or blender. Grind together to get a smooth liquid.
- Transfer it to a sauce pan. Add one more cup of water, curry leaves, and salt. Boil the mix for a minute.
- This soup should be watery. Add water to adjust the consistency. Turn off the heat.
- Heat oil or butter in a small pan. Add sliced garlic. Saute till they are crispy and golden brown. Turn off the heat.
- Transfer it to the same sauce pan. Add lemon juice and chopped fresh coriander leaves. Your favorite lemon and rice soup is ready!
- Serve it hot. Enjoy the taste.
