The Mighty Brussel Sprout

Brussel sprouts are a member of the cabbage family, with most of the production in the US occurring in California. The vegetable is a great source of Vitamin C and K, and a good source of Vitamin B6, Folate, and Iron. Don't let the addition of bacon scare you away from making tasty vegetables. Each skewer only uses one piece, which adds a mere 60 calories. So eat better, eat less!

Yields: 7 skewers


  • 20-25 Brussel Sprouts
  • 8 oz Mushrooms, Whole
  • 1 pkg Bacon
  • Tony Chachere's Creole Seasoning, To taste


Let's Make Some Magic

  1. Rinse the Brussel sprouts and cut off the hard ends. Place in a bowl and season with Tony Chachere's (may be omitted for lower sodium diets). Cut a slice of bacon in thirds. Wrap one of the sprouts with the ends of the bacon overlapping, then skewer through the overlapped bacon to secure. Alternate sprouts and mushrooms.
  2. Place on a foil lined tray and season again. Grill over medium heat for approximately 30 minutes. For softer sprouts move off of direct heat and continue to cook to desired tenderness.
