Bacon Wrapped Brussel Sprout Skewers

The Mighty Brussel Sprout
Brussel sprouts are a member of the cabbage family, with most of the production in the US occurring in California. The vegetable is a great source of Vitamin C and K, and a good source of Vitamin B6, Folate, and Iron. Don't let the addition of bacon scare you away from making tasty vegetables. Each skewer only uses one piece, which adds a mere 60 calories. So eat better, eat less!

Ingredients
- 20-25 Brussel Sprouts
- 8 oz Mushrooms, Whole
- 1 pkg Bacon
- Tony Chachere's Creole Seasoning, To taste
Prep

Let's Make Some Magic
- Rinse the Brussel sprouts and cut off the hard ends. Place in a bowl and season with Tony Chachere's (may be omitted for lower sodium diets). Cut a slice of bacon in thirds. Wrap one of the sprouts with the ends of the bacon overlapping, then skewer through the overlapped bacon to secure. Alternate sprouts and mushrooms.
- Place on a foil lined tray and season again. Grill over medium heat for approximately 30 minutes. For softer sprouts move off of direct heat and continue to cook to desired tenderness.
