- 2 cups fresh fenugreek leaves, washed, finely chopped
- 2-3 tbsp cashew nuts, soaked in water for a few minutes
- 2 green chilies
- 1/2 inch ginger
- 1-2 medium sized tomatoes, chopped
- 1/2 tsp cumin seeds
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1/4 tsp garam masala powder, available in Indian stores
- 1/2 tsp sugar
- 2-3 tsp oil
- 1/4 tsp coriander powder
- 1/4 tsp dry mango powder(amchur powder), available in Indian stores
- salt to taste

- Blend together soaked cashew nuts, ginger, green chilies, and chopped tomatoes to make a smooth paste.
- Heat oil in a non-stick pan. Add cumin seeds. Let them crackle.
- Add cashew nut paste and cook until oil separates from the mixture.
- Throw in red chili powder, turmeric powder, garam masala powder, dry mango powder, coriander powder, salt, and sugar. Saute the mix for a minute.
- Add chopped methi (fenugreek) leaves and stir cook for 2-3 minutes.
- Add corn and half a cup of water. Cook them for five minutes or until the mixture becomes thick.
