I'm a big believer in having some type of vegetable with dinner. When I choose to prepare salad, I like to switch it up and not always serve the same old lettuce salad. One of my favorite alternatives is cucumber salad. I've tried every kind of cucumber salad imaginable, and this recipe is my favorite by far.

Ingredients

  • 3 medium or large cucumbers, sliced thin
  • 1 large sweet onion, diced
  • 2 teaspoons sugar
  • 2 tablespoons white vinegar
  • 1 tablespoon apple cider vinegar
  • 1 cup mayonnaise
  • 1/2 teaspoon dried dill
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

  1. Cut onions into slices and sprinkle them with salt. Set aside.
  2. Peel and cut cucumbers into thin slices. (set aside).
  3. In a mixing bowl, combine the mayonnaise, dill, white vinegar, apple cider vinegar, and sugar. Mix with a whisk.
  4. Add onions and cucumbers to creamy mixture and toss.
  5. Refrigerate until chilled and serve.

Additional Notes: How to "Sweat" the Cucumber Slices

It is best to let the salted cucumbers "sweat" Arrange and salt cucumbers in layers in a bowl, then cover the bowl with plastic wrap or foil. Set a heavy can or object on top to help push the moisture out. The longer you sweat the cucumbers, the better.

Health Benefits of Cucumbers

According to wholefoods.com, Cucumbers are an excellent source of vitamin K and molybdenum. They are also a very good source of the pantothenic acid, copper, potassium, manganese, vitamin C, phosphorus, magnesium, biotin, and vitamin B1. Not to mention that contain the important nail health-promoting mineral silica.

The New York Times adds other interesting attributes of cucumbers. They can:

  • Help With Hangovers: Just cut up a few slices after a night of cocktailing to reduce dehydration and headache
  • Reduce Bad Breath: If you don't have chewing gum or mints around; cut up slices of cucumber to freshen your breath
  • Increase Your Energy: If your feeling tired and lacking energy, these green veggies are a great alternative to grabbing a soda loaded with caffeine.
  • Reduce Inflammation
  • Aid in Brain Protection: As they can improve memory and decrease the risk of dementia and Alzheimer's.
  • Contain Numerous Antioxidants
  • Reduce the Risk for Certain Types of Cancer
  • Reduce Stress: As they contain multiple sources of vitamin B.
  • Encourage Healthy Digestion: Cucumbers contain high levels of fiber and water which help maintain healthy digestion.
  • Help Maintain Weight: They aid in maintaining healthy weight due to the high fiber/water content.
  • Help Heart Health and Blood Pressure: They contain potassium, which helps to maintain heart health & lowering blood pressure levels.

Question: How long can I keep a creamy cucumber salad in the fridge?

Answer: I've left it in the refrigerator for four days, and it was fine. Just know that it sweats, and you may need to add more mayo if it's too watery for your taste.

I forgot to add a note which I did want to mention as this recipe was able to be made lactose free I found it creamy and enjoyable and as I am not allowed to have yogurt or sour cream as many recipes call for with this type of cucumber salad it was a beautiful and easy recipe that allowed me to make a fabulous salad for my family without having to worry about lactose issues. It's very hard to find recipes that are lactose-free and this was a simple quick easy fix that all my children enjoyed. Thank you for the great recipe!

My mom did the same thing with our cukes. I don't do it with this recipe but when I just add vinegar, I do let them sweat. Funny the memories food brings up. Thanks for coming by.

My mother always salted her sliced cucumbers also and then put a plate on top of them and a weight. It would draw lots of juice after a time (hours) and she would discard the juice and rinse the cucumbers thoroughly and then dress them much as you do. About time I made more of it. I've never thought of using three vinegars-What a great idea-I'm gonna try this next time I make it- which is usually monthly. I also love slicing cukes and dipping them in my home-made ranch dressing. I buy the Hidden valley Ranch packets and it's so much better than the ranch you buy in the stores.

It is great that you use both white and apple cider vinegar. I can attest that both of them blend so well in a cucumber salad. When I'm feeling really daring, I make a three-vinegar cucumber salad with white, apple cider, and balsamic vinegars.

Mmmm good.What a great recipe.I use to be just lazy and cut up a cucumber and peel half the skin off and score the rest with a fork to make it look fancy and cover it with italian dressing or sometimes two or more dressings if I want to be creative.Thanks for sharing.My taste buds and stomach can't thank you enough.

You can also try making one with only cucumber,mayonnaise, sugar to taste, and pineapple tidbits.Or cucumber, white vinegar, onion,black pepper and sugar to taste.It tastes as good, only cheaper.
