Easy Homemade Minestrone Soup
This recipe is a huge hit with my family! It was a simple side that I could whip together really quick to serve with my complicated lasagna. It's easy to make and doesn't require a ton of prep or clean up. Plus Olimar (my corgi puppy) loved helping out.
I originally found and followed a minestrone recipe from FoodNetwork.com, but then took some liberties in changing a few ingredients. I hope you enjoy this revised version!
- 2 Tbsp. olive oil
- 1 small sweet or yellow onion, diced
- 4 cloves of garlic, minced
- 2 stalks of celery, chopped
- 1 large carrot, skinned and chopped
- 1 can cut green beans, drained and rinsed
- 1 tsp oregano
- 1 tsp basil
- salt and pepper
- 28 oz. can of diced tomato
- 14 oz. can of crushed tomato
- 6 cups chicken broth
- 15 oz. canned kidney beans, light red prefferably
- 1 cup macaroni salad noodles, or small noodles of your choice
- optional parmesan and basil, for toppings on finished soup
- Prep Ingredients: Chop onion, Skin and chop carrot, chop celery, and mince garlic.
- Heat olive oil in pot on medium heat
- Cook onion until translucent (about 3-5 minutes). Then stir in garlic
- Add celery and carrot and cook until soft. (about 5 minutes) While that's cooking open your canned ingredients and drain and rinse the green beans and kidney beans.
- Stir in drained, rinsed green bean, oregano, basil, 1 Tsp. salt, and peeper to taste. (cook 3 more minutes)
- Stir in diced tomatoes, crushed tomatoes, and chicken broth. Bring to a boil.
- Reduce back to a simmer and let it cook for five minutes. Then stir in the kidney beans and simmer for another five minutes.
- Stir in the pasta. Cook for ten more minutes or until pasta is tender.
- Bon appetite! Serve and top with parmesan and basil if desired. This soup goes great with a side of garlic bread!

Tips for reheating leftovers
This soup tastes even better the next day! All the seasonings have had a chance to sit and marinate all the veggies. Unfortunately though, most of the broth gets soaked up by the noodles and beans.
When you're ready to reheat some leftover minestrone, use the stove top! It tastes so much better than microwaved soup and takes just a few minutes. To re-add some broth into the soup, simply mix in a little chicken broth, chicken stock, or water until there's as much broth as you'd like. Unfortunately that dulls down the delicious flavor! So make sure to add some of the seasoning back in!
I like to add a little bit of salt, pepper, basil, and garlic powder (I'd rather not mince another whole garlic clove). That will balance out the bland broth you've just added and voila! Good as new... if not even better!
