Fast And Easy Broccoli Casserole Dinner Recipe

Believe me when I say that this broccoli casserole is so easy to do that you can do it quickly in the afternoon after work with a kid on your arm—and at the same time, you can clean your home, read the news, unpack the dishwasher, help the older children with their homework, rearrange a meeting next week, and do your pelvic floor exercises! That is, if you don't grow your own broccoli.

As I have mentioned in other articles, I have the good fortune to be married to a chef, so the more complicated cooking is luckily not my responsibility. The few times when cooking falls on me, I often choose something I know how to do and/or something that doesn't take to long to make. You might have guessed by now that cooking isn't one of my biggest interests, but I love to eat good food. And I also want food that is healthy everyday food. This dish has it all, and it is convenient to prepare food in the oven so I can get other necessary things done at the same time! I guess we all have got used to doing many things at the same time in order to squeeze in everything during the few hours in the evenings after work. I don't have small children anymore but the rest of the chores is still there!

In Sweden, we call this dish broccoli gratin or broccoli låda (broccoli box)!

How to serve Broccoli Casserole!

Sometimes we need food that goes quick, is easy to make and we want it to taste good as well. The broccoli casserole has it all, it is easy, tasty and very quick to do! I use Broccoli casserole as a main dish if I add ham or bacon to the casserole. But the best way to use it is to use the casserole instead of rice or potatoes in a meal. That is so convenient, especially when I have leftovers of meat, poultry, beef patties or something similar from last day. Everyone in the family likes this and you will have a healthy complete meal with vegetables that is ready instantly!

Other advantages!

If you are lactose intolerant, use lactose-free milk instead of regular milk. The casserole can also be served to those who are gluten intolerant.

Another way to use this broccoli casserole is for those trying to lose weight by eating less carbohydrates because you can replace potatoes, pasta or rice with this casserole. If you are on a long term diet that includes high percent of fat and low carbohydrates you can make some small changes to the recipe and add some more fat and cheese to the casserole. Be careful with salt if you add bacon to the casserole.

For 4 Servings you need:

Ingredients
Amount
Frozen Broccoli
400 Gram
Bacon
1 package, about 150-200 gram
Eggs
4 Eggs
Milk
2,1 Cup (5 dl)
Salt, pepper
After taste
Butter
For the oven dish

Instructions:

  1. Set the oven to 200 °C or 392 °F.
  2. If you use fresh broccoli, let it cook for about 5 minutes in salted water. Pour it in a colander and let it drain.
  3. If you use frozen broccoli, you can just defrost it under warm water in an colander and let it drain.
  4. Fry the bacon crispy.
  5. Put the broccoli in a greased form 1-1,5 Litres.
  6. Sprinkle the fried bacon over the broccoli if you use bacon.
  7. Beat the eggs and add the milk. Season with salt and pepper.
  8. Pour the eggs and the milk on top of the broccoli and let it cook in the oven (200 °C) for 20-35 minutes. (The shorter time is if you have a low and wide form.)

For a LCHF variant you can do some minor changes in the recipe, like in the table below:

LCHF Broccoli Casserole!

Ingredients
Amount
Broccoli
400 Gram
Egg
2
Creme
0,8 Cup (2dl)
Cottage Cheese
200 Gram
Feta Cheese
150 Gram
pepper, oregano or basilika
After taste
Grated Cheese
0,4 Cup(1 dl)

Do the same steps as in the recipe above but mix the eggs with the creme instead of milk, and add the cheese to the mix before you pour it over the broccoli. Add the grated cheese on top and let it bake for about 20 minutes.

I really think that food should be cooked with love and I prefer it when cooking involves everyone in the family. In my case it means that me and our daughter assists my husband to create gastronomic experiences! We try to make dinners during weekends special, but during the weeks when everyone is busy and time is limited I need this type of recipe if I am the chef. Oh, I almost forgot, the pelvic floor exercises! As you might have noticed I didn't include them in the video because the exercises can easily be done during a few minutes now and then during the day!

        Broccoli is always looked down upon in my family and considering it's nutrition...I buy it.

        I would love to bake this veg and might alter is with out bacon strip since, am a vegetarian.

I hope it will be ok to convert the recipe to ounces, I didn't think about it. I will check it out as soon as I can and see if I can figure out how to convert the measurements. I chose relaxing music as a contrast to the stress I sometimes feel in the evenings after work. There is so much that needs to be done and it is so easy to just continue to rush around.         We eat broccoli often for the healh benefits and look for recipes to vary in serving at dinner. This is a winner. Your video is a great visual enhancement (relaxing music!) to your hub. I love the other activities and can relate to having to do homework with my child while keeping an eye on the stove.
