How to Make Onion Flakes and Onion Powder at Home

Onion flakes and onion powder are two very useful ingredients to keep on hand, especially when onion prices soar in the off-season.
When fresh onions flood the market in India, savvy home cooks purchase onions in large quantities and prepare onion flakes and onion powder. Then, when onion prices rise in the off-season, they can use these ingredients in their cooking.
Onion flakes can be rehydrated and used just like sliced fresh onions. I will show you how to do this in my video, below.

Ingredients
- 1 kg fresh onions
Instructions
- Trim off the stems and root ends of the onions, and then remove the skins. Slice the onions thin and separate the slices.
- Spread the onion slices in a thin layer on oil-greased trays and put them out in the sun to dry until they are completely dry and crisp. Keep the slices to dry under a fan at night.
- Grind as much of the dried onion slices to a fine powder and use the remaining as onion flakes.
- Put the flakes and powder in airtight glass bottles and store in a cool, dry place.
